TacoNGanas’ new food truck location will open December 3rd at 2120 Central at the corner of Central and Cooper.
“We’ve got nine tables and 19 parking spots,” says owner Greg Diaz. And, he says, “It’s all paved and cleaned and we put in a new fence around it and a brand new truck. We’re ready for Midtown.”
Diaz, who has four locations and eight food trucks, also is slated to open a restaurant on Germantown Parkway. “It’s going to be a little more of a high-end authentic Mexican restaurant. We’re hiring four chefs from out of the country, best in their field, to come provide the most highly cultural experience when it comes to authentic Mexican food.”
Diaz isn’t ready to reveal the name of the restaurant, which is slated to open the first week of February.
Born in Mexico City, Diaz says, “I was raised by a single mother of 10 children. And she still managed to open a restaurant and then turn it into a chain of eight restaurants.”
Diaz, who says he’s been cooking since he was born, says, “My main job is pastor of a church, Nueva Direccion, in the Perkins and Knight Arnold area. I’m probably best known for being the executive director of Las Americas, a youth development center. We serve 800 to 1,000 kids every day.”
As to how he got into the food business, Diaz says, “There’s always food around. We feed kids all the time. So, I thought, ‘I’m going to open up a taco truck to make some money to offset the cost of a lot of the food we served kids and youth.’”
The food truck was so well received, Diaz expanded to what are now four locations and 58 employees.
Asked why he felt he has come so far with his business, Diaz says, “I think the hand of God is on top of us.”
God has been “gracious” to him, he says. They do everything with a passion and they try to do everything “the best” they possibly can, Diaz says. “We’re always striving to do better today than we did the day before.”
