Your Heart’s Desire: Local Restaurants Offer Valentine’s Take-Out Specials

Light the candles. Start the mood music. Scatter the rose petals. And let Memphis area restaurants provide the romantic Valentine’s Day dinners. Several local establishments put all their hearts into creating dinners you can pick up and enjoy in the privacy of your own love nest. Here’s a sampling:

Erling Jensen: The Restaurant
at 1044 South Yates Road (901 763-3700) is featuring its Valentine’s Day To-Go, which includes clam and potato bisque and an arugula, pear, chèvre, and almond salad with saba vinaigrette; your choice of a 16-ounce beef Wellington or prosciutto-wrapped sea bass served with au gratin potatoes and roasted asparagus; and chocolate-covered strawberries. The dinner for two is $190. There will be an additional cost to interchange the options. Note: Erling’s also will be offering a half-dozen chocolate-covered strawberries for $25 on February 12th, 13th, and 14th.

Chef Tam’s Underground Cafe at 668 Union Avenue (901 207-2598) is offering a Steak Valentine’s Box for two, which includes one tomahawk steak with buttered mushrooms, butter-herb asparagus, garlic smashed potatoes, four honey-butter rolls, grilled strawberry shortcake, two premium cocktails, and one bottle of champagne. Price: $165 with cocktails and wine or $140 without. Becky Githinji

Tamboli’s Pasta & Pizza

Tamboli’s Pasta & Pizza at 1761 Madison Avenue (901 410-8866) is providing a “fun, interactive Valentine’s meal” for two, says owner Miles Tamboli. His Valentine’s Dinner Date Meal Kit, which will be available February 13th and 14th, includes a bottle of rose or Pasqua Romeo & Juliet Passione Sentimento (red or white) wine, an appetizer, pizza dough, sauce, and toppings; a recipe card so you can make your own pizza;, and tiramisu for two. Price: $59.95.

Andrew Michael Italian Kitchen at 712 West Brookhaven Circle (901 347-3569), Catherine & Mary’s at 272 South Main Street (901 254-8600), and The Gray Canary at 301 South Front (901 249-2932) are offering a four-course Valentine’s Day Take & Bake dinner for two. First course: salmon tartare with trout roe, apple, crème fraîche, fine herb, versus bianco, and C&M cracker. Second course: Gemelli lobster amatriciana, with panna gratta and basil. Third course: beef tenderloin with root vegetable purée and black truffle bordelaise. Fourth course: chocolate sticky butter toffee pudding with brown butter pecan powder and salted caramel gelato. Wine is an Arnaud Lambert Château de Brézé Crémant de Loire cabernet rosé. The special can be ordered at any of the restaurants until February 11th. Pickup is between noon and 5 p.m. February 13th. Price: $125.

Iris at 2146 Monroe (901 590-2828). Iris partnered with Muddy’s Bakeshop, Joe’s Wine & Liquor, and Rachel’s Flower Shop. The package for two includes an artisan cheese and accoutrement plate, your choice of slow-roasted American kobe short ribs or red snapper and Gulf shrimp court bouillon. These are served with sides of grits and roasted Brussels sprouts. Also, two Muddy’s cupcakes, six roses from Rachel’s, two chocolate martinis from Second Line, and a bottle of Constantia Uitsig South African sparkling wine from Joe’s. And it comes with a card for you to pour your heart into to whoever you’re sharing (or not sharing) the package with. Price: $165.

Magnolia & May at 718 Mount Moriah (901 676-8100) is offering a Filet and House-Made Pasta Magnolia Farm Chef Box for two. It includes local veggies, including Bluff City Fungi mushrooms, and a mustard cream sauce. The box comes with a recipe card and a YouTube video link with preparation instructions. Wine pairings can be added, or you can order a cocktail box, which features Maker’s Mark whiskey and includes a recipe card and video link with directions to make an old fashioned and a blueberry basil smash. Price: $44 for the dinner box and $50 for the cocktail box if it’s ordered with the dinner box. The price is $55 for the cocktail box if it’s ordered separately.

Sweet Grass at 937 Cooper Street (901 278-0278) is featuring a Valentine’s Day Prime Rib Dinner for Two that includes a winter cobb salad, loaded baked potatoes, horseradish cream, Boursin- and pistachio-stuffed piquillo peppers with black garlic honey, artisan rolls with whipped butter, chocolate-covered strawberries, and a bottle of wine. Price: $99 plus tax or $79 plus tax without wine.

Sunrise Memphis at 670 Jefferson Avenue (901-552-3168 ) is doing Valentine’s Day breakfasts: brioche bread with cheesecake frosting and a chocolate drizzle, topped with a chocolate-covered strawberry, for $14; and a Southern Surf and Turf Benedict: pan-fried country ham with fried oysters on an open-faced biscuit, topped with champagne hollandaise and scallions, for $15. Sunrise also will offer “breakfast in bed” delivery via Chow Now online at sunrise901.com. Sunrise recommends ordering early in the day because delivery orders between 10 a.m. and noon are sometimes severely delayed.

Cocozza American Italian at 145 S. Main Street patio (901 523-0523 to order), is offering a That’s Amore Valentine’s Dinner take-out special that includes an aperitivo: a Sicilian Spritzer, house-made of arancello, prosecco and pellegrino; a salad: roasted pepper Caprese with Buffalo mozzarella, re-roasted sweet peppers, basil, olive oil, and balsamic glaze, or a Caesar with romaine, parmesan, croutons, and creamy garlic dressing; pasta: Seafood Cannelloni, which are delicate crepes filled with shrimp, lobster, and crab and baked in a sherry cream sauce with parmesan, or a vodka rigatoni: lightly spiced tomato vodka cream. Entree is a choice of a six-ounce filet mignon Barolo, with red wine reduction, cremini mushrooms, and roasted potato wedges; Herb Crusted Salmon with roasted Brussels sprouts, champagne citrus butter, and balsamic drizzle; or Chicken Cocozza: chicken cutlets sautéed with artichokes, peas, prosciutto, and basil Alfredo. Desserts are a chocolate raspberry torte or a Grande Marnier Creme Caramel. Price: $75 per person plus tax and to-go fee, which includes a cocktail.

Cocozza also is offering the Lady & the Tramp Package, which includes a red-and-white checkered linen tablecloth, a red glass globe candle, and a Cocozza Valentine’s Spotify playlist code. Price: $20. Ask about to-go Wine & Bubbles specials. The take-outs will be available for curbside pick-up at the time you specify on February 14th. Unless they’re sold out, orders may be placed up to 2 p.m. on February 14th.

Award-Winning Chefs Ticer and Hudman Talk Bishop, the Fire at Hog & Hominy, and More

Andy Ticer and Michael Hudman have been busy opening a new restaurant, reacting to a fire at Hog & Hominy, and being honored by the James Beard Awards. Here’s a look at what’s happening with the award-winning chef team.

MF: How does your new restaurant, Bishop, complement or contribute to the presence of French cuisine in Memphis?

Hudman: Memphis is always, to us, a place that starts by acknowledging where we come from. French cooking is rooted in that same style of techniques, passed down, done right. It’s about mentorship. These are things that we value in our company. We’re always looking for ways to build our people, and this was a natural entry point. When the idea came to us, it just made sense to flex those old muscles as a callback to where we started. The moment that we saw the space that Natalie Lieberman had designed and the collateral and branding from Loaded for Bear, it clicked. We’d wanted to do a French brasserie for a while, and here it all was, ready to go.

Ticer: It’s funny. My brother Olivier is from France, and he just happened to be in town the week we soft opened. He told us that, often, brasseries are attached to train stations and breweries, and here we were opening one in a train station. It just made sense. We have our homage to Downtown trattorias at Catherine & Mary’s, our riffs on Southern food and oysters from the fire at The Gray Canary, and then our classic French spot attached to a train station.

What was it like opening a restaurant in the Central Station Hotel?

Ticer: There are challenges to opening any restaurant, but a restaurant in a hotel is a fun experience. We have to focus on all aspects of the food and beverage, from Eight & Sand and Bishop, to the events in the Grand Hall. The biggest challenge is that we really opened three spaces at once, so there are a lot of moving parts that needed to be focused on all at once.

Hudman: For us, it’s all about assembling the right team who can carry that culture of our restaurants. We want everything to feel like it was paid attention to and thought about for our guests, and that takes some time to get right. We opened in the middle of the holiday season, too, which was pretty intense.

How did your experience at Chez Phillippe contribute to the development of the menu and culture at Bishop?

Ticer: Chez Phillippe was such an amazing experience where we really learned to cook and really understood for the first time what it meant to cook with high standards. Chef Jose Gutierrez taught us so much about how to cook, how to pay attention to the details. A lot of the traditional menu items we first tasted cooking there, and after, when we were in Lyon, we were like, “Oh, this is how that started.”

What are some menu recommendations you would make for someone visiting Bishop for the first time?

Hudman: That’s always so hard because we love everything. But the tinned seafood is really special and really specific to European cuisine. We have a lot of classic items to French cooking that we’re not trying to reinvent the wheel on, just make it properly. Salade Lyonnaise, French onion soup, tarte flambée, the raclette. It’s about the classic preparation, and we had fun testing until we had it right.

Ticer: I love to start with the grand aioli or the escargot, and the spinalis is beautiful. But there are lots of things. I think go in with an open mind and try things you haven’t heard of. And drink some wine! Ryan Radish, our wine director, really had a field day putting together this 150-bottle, all-French list that is really beautiful and fun to drink from.

How does Bishop benefit from being part of the Central Station Hotel?

Ticer: When we first met with McLean Wilson about the hotel and he gave us his vision of it, we were like, yeah, this will be a cool thing to be a part of, a place that celebrates Memphis and really feels local. We really appreciated that McLean wanted us to open our restaurant inside the hotel and not the other way around, a hotel restaurant. It allows us a lot of freedom to do exciting and fun things with the menu. Just like our experience with Ace, there’s a lot of infrastructure that the hotel has that gives us the ability to do things we’ve never done before, including working with these awesome design teams. Because the hotel really wants to function as the living room of South Main, we see a lot of guests from all over, but we’re still a part of the fabric of South Main and the Memphis community, rather than separate from it.

Another of your restaurants, Hog & Hominy, suffered an electrical fire earlier this year. How has the restaurant and the staff recovered since then?

Hudman: It’s been a real process. Our first priority was to get everyone working, and we met with everyone as a group, and individually, to make sure they were happy going to another restaurant. Our team was loyal to Hog & Hominy, and none of them wanted to leave, but they understood and are now doing their thing throughout the company. They’ve added a lot, too, to those restaurants, and when they come back for the reopening, they’re going to have learned a lot. It’s like an extended externship for them.

Ticer: We’re going through the insurance process now, which can be pretty frustrating at times. But what we know is that we’re bringing the existing structure down and starting over. Fitting Hog & Hominy into a ranch house was always something we were working around, even during the remodel that started last year. So now, we’re starting over with a blank slate. It will always need to feel like the old Hog & Hominy, but we have an opportunity to address things like comfortable chairs, noise, kitchen layout, server stations. It’s going to take longer than we hoped, but we’re not afraid of taking our time to get it right.

The James Beard Awards are an extremely high honor, recognizing chefs and restaurateurs from across the country. How did it feel to be named semifinalists once again — and also to be the only semifinalists from Memphis?

Hudman: It’s a huge honor to be on the list. I mean, just looking over the list of the chefs on there from our region and around the country, it’s really humbling to see your name on there. Our teams work so hard to produce in the restaurants, so while it is our name, it’s a nod to them as well. We can’t do it without them.

Ticer: Memphis is growing around the country as a place to come and visit, to see, to move to. We’re a city of history, culture, and great food in all kinds of restaurants. It’s an honor to represent that on a stage like the James Beard Awards.

What’s it like representing Memphis cuisine to those who may not be familiar, or who might think of Memphis food as just barbecue and fried chicken?

Ticer: You know, I think that Memphis might be known for barbecue and fried chicken, but we think of Memphis food as coming from the family table. It’s about feeding people because you care. We grew up and got into food because of our grandmothers and our family meals. Sure, you might get yelled at, but there was always good food, and everything came from a place of love. If we can make people feel cared for, then we’re showing them what Memphis food is.

What’s next for the Andy Ticer and Michael Hudman team?

Hudman: We are mainly focused on getting Hog & Hominy back open, but we do have lots in the pipeline. We’re just about finished with the redesign of the interiors at Andrew Michael Italian Kitchen that Natalie Lieberman has headed up. We’re trying to make that restaurant feel updated and even more comfortable for our guests. And we have some plans to move into Catherine & Mary’s for some adjustments as well. It’s been running for four years and needs a little love. Mainly, we’re focusing on making sure that the restaurants feel good for the guests and work for the staff.

Bishop Restaurant Slated to Open in Mid-December in Central Station Hotel

Meet “Bishop,” the newest restaurant brought to you by Andrew Ticer and Michael Hudman, chef/owners of Catherine & Mary’s, The Gray Canary, Andrew Michael Italian Kitchen, Hog & Hominy, and Josephine Estelle in New Orleans.

Bishop, a 3,500 square-foot space in the Central Station Hotel on the corner of South Main and G. E. Patterson, is slated to open to the public in mid-December.

It was named Bishop after the late Church of God in Christ Bishop G. E. Patterson.

The food will be French brasserie style served in a “more upscale environment,” says assistant general manager Pablo Villarreal. But still in a “more casual setting.”

Guests will start with “le comptoir” (the counter), which are “snacks high in acid and salt that will be great to start off to cleanse your palette and get you ready to enjoy the menu,” Villarreal says. These will include tinned seafood, which are “delicacies common in France – baby eel, baby squid, and calamari.”

They then will move on to “petite plats” (small plates), which include escargot and oysters, and “grand plats” (large plates), which include steak au poivre, chateaubriand, and lamb chops.

Desserts, including crepe cake, will be made in house by chef Kayla Palmer.

Ticer and Hudman always wanted to open a French restaurant. They worked under chef Jose Gutierrez (River Oaks chef/owner) for five years at Chez Philippe in The Peabody. “We learned our palette from him,” Ticer says.

He and Hudman fell in love with the French “philosophy and approach to food” when they went to cooking school in Southern France.

Bishop seats 130, the bar area seats 18, and a private dining room seats 18, says general manager Emily Stanford.

The interior, with its black-and-white Cathedral style flooring and lots of windows, is a perfect accompaniment to the food. The approach was “keep the old train station feel,” Villarreal says. As if you’re “still in a train station having a drink.”

Natalie Lieberman of Collect+Curate Studio with the help of art consultant Anna Wunderlich designed the interior of Bishop.

Lieberman says she “started with a story” when she began work on the restaurant. “The only info I had was the name ‘Bishop,’” she says. She began to “create a narrative.”

Earthly elements, including leaves and mushrooms, combine with objects, including keys and bells, that go along with “Bishop,” Lieberman says.

There’s also a “spiritual underlying theme” with the stars, beads, and tarot cards, she says.

Butch Anthony of the Museum of Wonder in Alabama created the hand painting in the dining room.

“Moody and rich and textured” was the feel she was going for at Bishop, Lieberman says.

She succeeded.

Eight & Sand Opens in Central Station Hotel

Eight & Sand opens October 24th.

Eight & Sand opens at 4 p.m. Thursday, October 24th in Central Station Hotel.

The sleek, new bar fills up the train station’s old waiting room. Travelers still can wait in the old space, but now they can wait in groupings of four to eight people at mixed Mid-Century-style tables and chairs and sip classic drinks, including martinis and Manhattans. They also can try a “Memphis Bell,” “Hurricane Elvis,” and “Knuck if you Buck” cocktails.

They also can listen to Memphis music.

The restaurant is by Andrew Michael and Andrew Ticer, who brought you Andrew Michael Italian Kitchen, The Gray Canary, Catherine & Mary’s, and Hog & Hominy restaurants. Ticer and Hudman partnered with Central Station Hotel to do the bar and the upcoming Bishop restaurant, which is slated to open November 15th.

“Eight” is the highest throttle or “top speed” on the train and “Sand” stands for the sand they used to throw on the tracks so the train wheels wouldn’t slip, says Central Station Hotel food and beverage director Evan Potts. So, the name means “wish you a safe and speedy journey.”

The also Mid-Century looking bar features 10 seats as well as seats for the disabled.

The emphasis is on cozy. The vibe for Eight & Sand is “the living room of South Main.”

The look of the room is “clean” without feeling “sterile,” Potts says. “It’s so warm and so fun.”

They want Eight & Sand to be where people stop for a drink before a show at The Orpheum or other venue and then re-visit it after the performance or game, he says.

The bar menu will include “small snacks” or “share-ables,” Potts says. These will include the pimento puffed pastry, which was a popular item at the old Ticer/Hudman restaurant,  Porcellino’s Craft Butcher.

All the music is either recorded in Memphis, by Memphis artists, or about Memphis, Potts says. The console in the deejay booth is an old organ.

Vinyl records will be played by deejays, but programmed Memphis music also will be played when deejays aren’t in the booth.

So, what’s the first song to be played at the opening? “Probably ‘Melting Pot,’’” says music curator/head deejay Chad Weekley. The Booker T. & the M.G.s song is “a good track,” Weekley says. And, he says, the song “sums up our city.”

Catherine & Mary’s unveiled its new summer menu recently.

But don’t worry — certain favorites — Sunday Meatballs, the Cheese Plate, the lamb and veal, and the Rigatoni, etc. — are still available.

The new menu features an asparagus plate with artichoke, creme fraiche, horseradish, brown butter, and white cheddar; scallops with pork cheek, green tomato, cucumber, ramps, strawberry, and benne seeds; gnudi with watercress, sugar snap peas, basil, and panna gratta; and NY strip with bordelaise, asparagus, green garlic, tomato, and mustard greens. Late one night last week, I wound up at the bar at Catherine & Mary’s. It was about an hour before closing, and, on a whim, I decided to meet friends for a quick drink. I was already wearing my pajamas — Target pajamas, the type that look more like work-out wear than lingerie — and, I am ashamed to write today, I just put on a jean jacket and a pair of clogs before heading out the door. Truth is, I was tired, both from work and from recent sinus surgery, and it seemed easier to go with the flow than to stay home as-is or get dressed back up before driving Downtown.

My friends didn’t blink. Neither did the bartender, when I blurted out my obvious fashion faux pas. I pointed to my PJs, and he nodded knowingly and whipped together a deliciously foamy concoction of blood orange juice and gin, topped with a rosemary sprig and served in a coupe glass. That one drink made me feel like my pajamas were a chic, clever joke that he, my friends, and I were all in on. And within an hour, I was back home and climbing into bed, where that dreamy taste of gin, blood orange, and herbs quickly sent me off to slumberland.

French Connection

The next night, I was all dressed up — striped pajama bottoms, an old T-shirt, and wool slippers — with nowhere to go. Instead of heading back out, I turned to the internet, where I found dozens of bedtime cocktails to taste-test. Nightcaps, it turns out, are really a thing. The trick is to just have one — too much alcohol at bedtime, doctors warn, and you can have overly vivid dreams, night sweats, disturbed REM patterns, and insomnia.

My current favorite, which is particularly perfect for these cooler nights, is the Hot Chai Toddy. I found the drink on a spirits website called Supercall; apparently, it originated at a British bar called the Gin Garden. First, you brew a cup of Chai, which I did using a new electric water kettle. While that’s happening, simmer one and ¾ ounces of apple juice with a cinnamon stick and a spoonful of honey. Pour the tea and the apple juice concoction into a mug, then stir in one and ¾ ounces of gin. Squeeze a lemon over it, or add a few lemon slices to the mug. Sip, then slide into bed.

Then there’s cognac. If you’re drinking this distilled wine straight, look for bottles with the VSOP rating, which signals that the cognac was aged at least four years (the acronym stands for “very superior old pale”). I tried an ounce solo one night; the next, I combined cognac and amaretto liqueur (one and a half ounces of the former and ¾ ounce of the latter). Traditionally served over ice in an old fashioned glass, this drink, called the French Connection, had depth, due to the cognac, while the almondy taste of the liqueur reminded me of marzipan.

This weekend, I discovered the Lavender Honey Cream Cocktail, a sophisticated milkshake-like drink that required making lavender honey syrup, which is easier than it sounds, but still, something I saved for my less somnolent hours since it involved turning on the stove. The following night, I was ready — and so I combined one and a half ounces vodka, one ounce of heavy cream, an egg white, and an ounce of lavender honey syrup in an ice-filled cocktail shaker and gently shook it for 30 seconds. Then, I strained the drink into a cocktail glass and retired to the living room, where I put on a Nina Simone album and lit a scented candle from Anthropologie. Nina sounded theatrically melancholy; I sipped my drink and felt my eyelids grow heavy. Perhaps it did the trick too well — I didn’t manage to rinse my glass or the cocktail shaker before conking out, which meant that both items had to soak in the sink the following morning.

Catherine & Mary’s sous chef J.R. Bearden on mentors and radishes

A tattoo of a skeleton holding a frying pan graces J.R. Bearden’s arm, but it has nothing to do with Bearden’s culinary career. He got the tattoo at 18 because he liked the imagery.

Now Catherine & Mary’s sous chef, Bearden, 26, also sports a tattoo of a radish. It’s an homage to chef Frank Lee, whom he worked with at Slightly North of Broad in Charleston. “I think we talked for an hour about how cool the radish is — this vegetable that’s not for everyone but just a small, burst of flavor,” he says.

Working as garde manger under Kevin Rathbun at Rathbun’s in his hometown of Atlanta was Bearden’s first job in a fine dining restaurant. “That was when it started to click that I think I might be kind of okay at this. I was working with things that I’ve never seen or heard of. And I don’t think I would have gotten that experience working in a more conventional or traditional restaurant. I think that was the first time I tasted fish sauce.”

Two years later, Bearden was in Charleston working with Lee. “He is the catalyst for that type of hyper-seasonal, low-country cooking, and his passion is just contagious.”

Later, Bearden worked with chef Mike Lata at The Ordinary. “He is the epitome of the term ‘chef.’ The way he approaches his profession and flavors and every plate that we use in his kitchens at The Ordinary and FIG are on the next level standard that I hadn’t been a part of up to that point.”

Bearden then worked under executive chef Kyle Jacovino at The Florence, a Hugh Acheson restaurant in Savannah “dedicated to this kind of seasonal cooking with a sense of place … and using honest and genuine techniques.”

Bearden met his future wife, Kelly, who was pastry chef at The Grey, and they moved to New Orleans, where he got a job at Kenton’s working under executive chef Kyle Knall. “I liked his approach to American cooking. Seeing him build plates confidently that were delicious was really inspiring to me.”

While at Kenton’s, Bearden learned to “try not to hide behind techniques. Just present food as it’s best served. Just understand where the food was coming from and how best to present it as lovingly crafted as the person who’s growing it.”

Because of his “subliminal kind of quest to work for the best chefs possible,” Bearden went to work at Josephine Estelle, a New Orleans restaurant owned by Memphis chefs/restaurateurs Andy Ticer and Michael Hudman. “The desire to create the best possible iteration of a raw product is something that really got me going there.”

Ticer and Hudman asked Bearden to help open Catherine & Mary’s. “You get to the point where you can kind of pick and choose your mentors as you get further along in your career as a chef. By that point, I made the decision that I’m choosing Andy and Michael to mentor me.”

Bearden began creating his own style of cooking. “I just took a combination of all those experiences I had in these different cities and working with different chefs. I think I just started to figure out what I like. What I focus on most now is just very bright and clean flavors.”

He loves the collaboration in the kitchen among himself, chef de cuisine Ryan Jenniges, and John Utley. “We brainstorm together. We kind of push each other in a direction of a dish, and then it’s a culmination of effort. We take cues from the cooks and what they’re interested in. If they don’t like an ingredient, then we scale it back and we start over. We just want everyone engaged with every plate. And have a connection to every plate.”

Now open: Char and Catherine & Mary’s

Earlier this year, restaurateur Ben Brock took home the Restaurateur of the Year award from the Memphis Restaurant Association.

Brock owns 11 restaurants in Tennessee and Mississippi, including Amerigo and, most recently, Char, a seafood and steakhouse in the Highland Row development near the U of M.

This is the second Char location after 15 years of success in Jackson, Mississippi. From floor to ceiling, kitchen to table, it is no surprise that Brock can add the MRA trophy to his mantel.

“It’s unlike your typical steakhouse,” Brock says. “It has a little more personality, a little more Southern charm.”

It’s a perfect mixture of old and new, with dark wood and white tile, big open spaces and large windows, and a menu that will inspire a following of regulars who will want to check off every item.

Brock says their gumbo won a Jackson, Mississippi, gumbo contest, with its thick, dark roux and generous chunks of crab, sausage, and chicken ($5/cup, $7/ bowl).

“It’s stirred a lot,” Brock says. “It gets a lot of love.”

The Cornbread Dusted Redfish, which has been getting a lot of attention from the clientele, is served with Delta Grind grits, spinach, and Abita Amber crab pan sauce ($15 lunch, $28 dinner).

“That’s a recipe from [chef] Steven Howell,” Brock says. “He’s newer to our concept, so he gives everything a new spark.”

Char-Jackson veteran Anthony Hatten is the other half in the kitchen, the brains behind the longtime favorite, the filet, a cut of tenderloin served with two choices of sides ($36/eight ounces, $51/12).

And Brock swears by his pecan pie.

“We also sell them whole during the holiday season,” he says. “[In Mississippi], we’ll sell up to 150 during Thanksgiving week. It’s one of the best, and we make it in-house, every day.”

Childhood friends, co-chefs, and business partners, Andrew Ticer and Michael Hudman have done it yet again.

The pair behind Andrew Michael Italian Kitchen, Hog & Hominy, and Porcellino’s Craft Butcher have branched out of their familiar Brookhaven Circle multi-digs and headed west with their latest edition of traditional Italian cuisine with a Southern flourish, Catherine & Mary’s.

Housed in the ground floor of the Chisca on Main, this iteration of their brand of distinct Italian food would make their grandmamas proud.

It is named for them, after all — from Hudman’s grandmother, Catherine Chiozza and Ticer’s Mary Spinosa.

The approach can be bracketed between Andrew Michael and Hog & Hominy, according to Ticer and Hudman.

There are no shrinking violets on the menu, with oysters served with spinach, brandade, paddlefish, caviar, and panna gratta; radiatore served with pistachio pesto, mint, basil, and smoked ricotta salata; monkfish; cassarecce served with foie gras and giblets; and yes, they have Maw Maw’s gravy … with meatballs.

With a menu like that, you need a knockout setting, and the Chisca delivers.

Full windows flank the northwest walls with enviable views of Main Street.

Walls are left rough, and I kind of want to take all of the furniture home with me.

A 27-foot bar seats 20 along the north wall, and they offer a private dining room with access to a Chisca event room.

In 2008, they opened their flagship restaurant, Andrew Michael, followed by the more casual Hog & Hominy in 2012. Porcellino’s, which, in my opinion, offers some of the strongest coffee in town, made its debut in February of last year, and early this year New Orleans hipped themselves to the Memphis duo with the opening of Josephine Estelle in the new Ace Hotel.

The Year Ahead in Memphis

Bass Pro Shops: Last year, right here in this very same spot in this very same issue, we said the opening for the Bass Pro store in the Pyramid was delayed until May 2015. (We apologized because in 2013, right here in this very same spot in this very same issue, we said you’d be doing your 2014 holiday shopping there. Remember? No? Well…)

It’s not big news that the wait is over. Bass Pro Shops in the Pyramid opened April 29th with a line of customers that stretched into the parking lot. More than 35,000 visitors cranked the turnstiles that day.

Bass Pro: now open.

By August 4th, more than one million people had visited Bass Pro Shops in the Pyramid. In mid-December, store officials said Bass Pro had seen more than two million visitors. Also, the store sold more than 27 tons of fudge in about eight months.

Ikea: Memphis rode high on the 2014 news that Ikea, the Swedish retailer with a cult following, announced it was building a store in Memphis, not “It-City” Nashville. And, boy, did we rub Nashville’s nose in it (on social media). Nashville, ya burnt! Ha!

Then, we noticed that no work — nothing — was being done on the Ikea site behind Costco on Germantown Parkway. The store, the source of our cool cachet, was held up by a tax dispute. The city breathed a sigh of relief when, in late November, locals came up with a tax-payment workaround and Ikea said it would go ahead with the Memphis store, with a late 2016 opening date.

What’s in store for the Mid-South Coliseum?

Mid-South Coliseum: Can rape allegations save a building? Maybe. Last January, the Mid-South Coliseum seemed destined for the wrecking ball. Locals were considering the Tourist Development Zone deal, which would fund a huge plan to reinvent the Mid-South Fairgrounds into a youth sports destination. That plan had no place for the Coliseum.

A grassroots group, the Coliseum Coalition, started organizing. They hosted two events, called Roundhouse Revivals, to get people to the Coliseum and to get them to share their thoughts as to what it could be. The Urban Land Institute even said part of the Coliseum should be saved.

Then this summer, Robert Lipscomb, the city’s former director of Housing and Community Development and the major backer of the youth sports plan, was accused of raping a Memphis teenager, years ago. Lipscomb was fired, and the entire Fairgrounds deal, which includes the Coliseum’s future, was left up in the air, where it remains.

Tennessee Brewery: The only bad news about the Tennessee Brewery this year was for the thousands who loved drinking beer in its makeshift annual beer garden. Developer Billy Orgel bought the brewery building in 2014, a big win for preservationists, as the building was slated for demolition. In January, Orgel and his team unveiled a plan that included apartments, a parking garage, retail shops, and more, in a $25 million project called the Brewery District. Orgel promises a restoration of the historic building and a renewed vibrancy to South Main. He’s said the buildings could be complete and occupied in 2016.

The Pinch District: Not much is yet known about the future of The Pinch, except local leaders are making plans for changes.

In January, the district was in the crosshairs of the Tennessee Historical Commission, slated to be removed from the National Register of Historic Places. The plan was thwarted, then a MEMFix event in April brought in thousands.

In October, Memphis City Council member, Berlin Boyd, assembled government and business leaders to announce they were moving forward with plans in the Pinch. Though Boyd didn’t share many details, he did say that the area’s two largest tenants — St. Jude Children’s Research Hospital and Bass Pro — would likely drive much of the direction of the plan. That meeting came right before St. Jude announced an expansion plan for its Memphis campus worth about $9 billion (yes, billion with a “B”).

The Commercial Appeal: Until this year, the city’s daily paper had had one owner — Scripps — since Franklin D. Roosevelt was president. But it got a new owner in the spring of 2015 — Journal Media Group — and will likely have another by March.

Gannett Co., the largest newspaper company in the U.S., agreed in October to buy JMG for about $280 million. If the deal is approved by stakeholders and the government, it is expected to close in the first three months of 2016.

The move could possibly bring more layoffs in the CA newsroom. Some analysts are concerned the move could mean less emphasis on local reporting and bring a homogenous USA Today format to the paper’s look and writing. The deal also worries some media watchers, as it would mean Gannett would own all but one of the state’s major dailies.

Midtown Market: Those blighted buildings on the southwest corner of Union and McLean could be gone by June. That was developer Ron Belz’s prediction earlier this month to Memphis City Council members.

Later that day, the council agreed the city would take out a loan for $4 million to help Belz build “Midtown Market,” a mix of apartments, retail shops, and, perhaps, an “upscale” or “boutique” grocery store.

The city’s part of the funding was one of the last (and most critical) pieces of funding Belz said he needed to make the project work. City officials are still working on a plan to control traffic around the site, which will also soon have a new, expanded Kroger nearby.

Central Station: Want to watch a movie downtown next year? Well, it’s likely that you’ll be able to. Developers want to transform the 101-year-old Central Station building and the area around it at the corner of G.E. Patterson and Main into a residential and entertainment campus.

Henry Turley Co. and Community Capital LLC plan to transform the station building into a hotel, with a restaurant and some retail shops. Around the corner, they hope to build a Malco movie theater, apartment buildings, and, possibly, a grocery store.

The city council approved $600,000 for the project this month, which developers said they needed to begin construction. Expect dirt to move on the project soon.

One Beale: Scrapped during the recession, One Beale is expected to rise at the western end of Beale in 2016. If built, the $150 million project will change the city’s skyline with two — possibly three — new towers right on the Mississippi River: a 12-story office building, a 22-story hotel, and a 30-story apartment tower. Construction could take more than two years, pushing the grand opening to sometime in 2018. — Toby Sells

The Green Room: The latest project from Jeff Johnson of Local/Oshi Burger Bar/Agave Maria, will be an event space and restaurant with a pop-up concept. Johnson is hoping to start holding events in the Green Room, located in the old Evergreen Grill space on Overton Park, as soon as January. He’s also planning to launch the restaurant that same month.

The pop-up aspect is ambitious. Fare and chefs will change on a regular basis. One idea Johnson is currently contemplating is a French brasserie. Johnson says he’s been in contact with chefs from Memphis and around the country to work in the Green Room. As for the name, he says it’s a nod to the location, the Evergreen neighborhood, as well as to green rooms, a space for celebrities and VIPs at TV shows and concerts. Johnson says he wants customers to feel like they’re the star of the show.

LYFE Kitchen and Catherine & Mary’s in the Chisca: The opening date is unknown at this point for these two restaurants set for the old Chisca Hotel, though it should be sometime in the coming year. The Carlisle Corporation, which has been renovating the Chisca, bought a minority share of LYFE in 2015 and moved its headquarters to Memphis. Carlisle opened the first Memphis LYFE, offering healthier meals in a fast-casual setting, in East Memphis.

In regards to Catherine & Mary’s, the partnership with Andrew Ticer and Michael Hudman of Andrew Michael Italian Kitchen, Hog & Hominy, and Porcellino’s was a bit of a surprise, as Ticer and Hudman seemed dedicated to building something of a restaurant commune on Brookhaven Circle. Catherine & Mary’s, according to a press release that announced the deal, will serve “traditional Italian cooking through the lens of the American South.”  

The Curb Market: The Curb Market is a hyper-local market set to open in the old Easy Way space on Cooper in late January. It’s owned by Peter Schutt, who is also owner of two farms as well as The Daily News Publishing Co. Ben Fant of Farmhouse is working with Curb on its marketing. Fant says in an email: “Completely LOCALLY sourced produce, meats, and groceries. The goal of the market is to support local farmers and source their goods first. Depending on seasons, they will source regionally and on occasion, nationally, but always U.S.A. All meats will be grass-fed and free-range. Everything in the market will be economically viable and sustainable … The focus is on agriculture not agribusiness.”

Crime & Public Safety

Despite a shortage of Memphis Police officers, crime steadily decreased in 2015. Comparing statistics from January to November, crime was down 1.5 percent countywide and .6 percent in the city.

But the drop since 2006 has been phenomenal — 17.8 percent countywide and 13.6 percent in the city. That’s when the Memphis Police Department (MPD) first started using data-driven policing via its Blue Crush model. It was also the first year of Operation: Safe Community (OSC), a massive, multi-agency, crime-fighting initiative from the Memphis Shelby Crime Commission that addresses everything from offender recidivism to truancy.

“We’re down significantly from 2006, and if you go back to what some might say are the good old days of the late 1980s, we’re considerably down from those numbers as well,” said Crime Commission interim director Rick Masson.

It’s impossible to predict crime rates for 2016, but Masson said he believes we’re on track to continue the crime decrease. Next year will be the last year for the current version of OSC, and various law enforcement agencies will be coming together to work on another five-year OSC plan to launch in 2017.

The MPD will gain a new police director in 2016. Current Director Toney Armstrong announced in October that’d step down once Mayor-elect Jim Strickland found a replacement. One challenge for Strickland and the new police director will be hiring and retaining officers.

“There’s a shortage of police officers, so that’s something that will have to be addressed by the new administration,” Masson said.

At a public forum this month, Strickland’s transition team threw out a few ideas to reduce crime. They set a goal of decreasing police resignations by 20 percent in his first year and 30 percent each year during the rest of his term. They also want to reduce police response time to an average of three minutes, educate the public on the proper use of 911, and fully staff the 911 call center, and seek public/private partnerships to offset the costs of police recruitment classes.

The city’s rape kit testing backlog should be cleared in 2016, according to Memphis Sexual Assault Kit Task Force coordinator Doug McGowen. “We hope to have the vast majority of the kits tested in 2016. We ship about 300 a month out, and we have about 3,900 that need additional analysis, so we’ll be very close to meeting that goal,” McGowen said.

McGowen, who has been tapped by Strickland as the city’s new chief operating officer, said he’d continue to run the task force for the foreseeable future.

The New Daisy: After signing an exclusive booking deal with Live Nation, the New Daisy went through major renovations and became one of the best places to see live music in Memphis. The “new” New Daisy features a state-of-the-art sound system and stage lighting, and even a VIP area known as the Big Star Room.

After years of being the bookend on the dark side of Beale Street, the New Daisy is alive and well, and bringing big names like Dropkick Murphys and Disturbed to Memphis in 2016.

FedExForum: The Forum has a stacked calendar early in 2016, with Barry Manilow, The Doobie Brothers, and Billy Joel (the Piano Man’s only Tennessee appearance) coming to town.

The Hi-Tone: The club changed hands just over a year ago, but the Crosstown venue is still going strong under the direction of Brian “Skinny” McCabe, hosting festivals such as Gonerfest and Rock For Love, in addition to specializing in metal, punk, and garage rock shows.

Bar DKDC: This small Cooper-Young restaurant/bar has become a full-fledged venue, with local and touring talent playing the room on a weekly basis. Don’t expect that to stop anytime soon.

Rocket Science Audio: RSA continues to be one of the most intriguing venues/recording studios in Memphis, and their monthly Variety Show has come a long way since its inception. Expect big things from them in 2016.

Found: Another new venue worth a mention is the vintage clothing/furniture store on Broad Avenue that every so often hosts musical up-and-comers of all kinds in its back room.

Lafayette’s: The signature music club in Overton Square continues to make the Square a hot destination for tourists and locals alike by booking bands every night of the week. Expect that to continue in 2016.

Levitt Shell: It was recently announced that the Shell will undergo $4 million dollars in renovations. The Overton Park outdoor venue will receive upgrades to its sound system, bathrooms, and musician load-in area. In addition, a bigger, permanent area for vendors will be constructed. All those improvements should make for an exciting (and packed) Concert Series.

The Bands: Plenty of Memphis acts had strong years in 2015, including NOTS, Cities Aviv, Julien Baker, and Lucero, to name but a few.

NOTS released their debut We Are Nots late last November, then did lots of touring before impressing the U.K. label Heavenly Recordings at South by Southwest. The label brought NOTS to Europe last month for a slew of shows. NOTS begin working on their sophomore LP in January.

Cities Aviv also continued to be one of the most intriguing figures in the Memphis rap community, even if he spent most of the year in New York City. He’s back in Memphis now, and his new album Your Discretion is Trust, is some of his best work.

After conquering Europe with his sidekick Quinton-JeVon Lee, aka RPLD GHSTS, expect to see plenty of Cities Aviv in 2016, starting with a Hi-Tone show in early January.

Julien Baker

Julien Baker is another Memphian who had to leave the city to get national recognition (she currently attends MTSU). Her debut album Sprained Ankle, released this fall, has been championed by NPR, Pitchfork, and every other music media outlet that has good taste.

Other local bands to watch out for in 2016 include Deering and Down (who have a new album coming in early 2016 from BAA), HEELS, Aquarian Blood, Evil Army, RPLD GHSTS, and the Sheiks, who are already headed back to Europe in 2016 with Jack Oblivian.

Hometown champs, Lucero, dropped a great new record that they recorded at Ardent with Ted Hutt, and they also join the ranks of Memphis bands crossing the pond in early 2016.

Deck the Halls: The 2015 openings of the Blues Hall of Fame and the Memphis Music Hall of Fame were notable events, creating two worthwhile institutions that will honor Memphis music for years to come, in addition to bringing in tourism revenue. The opening ceremony of the Memphis Music Hall of Fame brought Jimmy Fallon, Justin Timberlake, and Keith Richards to town, making for one of the most star-studded events of the year.

Vinyl Thoughts: The Memphis Record Pressing plant is up and running, cranking out records for Sony, Fat Possum and Goner, and bringing the vinyl business back to the birthplace of rock-and-roll. It’s an amazing addition to our music resume to be one of the few cities in the United States to have a vinyl pressing plant. Take that, Nashville! — Chris Shaw

Politics

Hillary’s Boast and Red-state Reality: The most obvious political fact about 2016 is that it’s a presidential-election year, and that fact would ordinarily not be expected to ruffle Tennessee’s red-state Republican feathers, except that presumptive Democratic nominee Hillary Clinton has already barnstormed the state once, declaring that she intends to “turn Tennessee blue” again by dint of hard and purposeful campaigning here — something that Barack Obama conspicuously did not do in either 2008 or 2012.

Of course, presidential elections still call out Democrats in disproportionate numbers to the polls, and if Donald Trump should keep on keeping on and succeed in telling the Republican establishment, “You’re fired,” then really weird things could happen here.

But, as things stand now, Clinton would have to recreate a state party infrastructure, more or less Phoenix-like, from the ashes.

City Council and County Commission: Memphis’ newly configured city council seems well-stocked with youthful, business-friendly members, a good match-up with the city’s new mayor, Jim Strickland, who made his name as a council advocate of fiscal solvency above all. (Which means that the core issue of how to retain a stable police force in the absence of restored benefits will continue to be a vexation.) And, while Democrats are nominally a majority-of-one on the Shelby County Commission, the chairman, Terry Roland, is a Republican, and, on key votes, Democrats Justin Ford and Eddie Jones fairly persistently go with the GOP, more than canceling out Republican Steve Basar’s working relationship with the Democrats.

Beyond matters of partisanship, the unresolved issue in county government is whether the current commission power struggle with county Mayor Mark Luttrell succeeds, and to what extent.

Electoral Matters: It wouldn’t be an even-numbered election year without somebody venturing once again to do that which so far nobody has succeeded in doing — namely, mounting a serious challenge against 9th District Congressman Steve Cohen.

Among those who have been talked up — by themselves or by others — as itching to take a shot are attorney Ricky Wilkins (a redux case from 2014), state Representative G.A. Hardaway, and, most recently, state Senator Lee Harris.

And, though Harris’ seat wouldn’t be the right location geographically, current Shelby County Commissioner Heidi Shafer, an East Memphis Republican, is looking hard at making a run, ASAP, for the state legislature. That’s why Shafer, the commission’s budget chair for three years running, opted to chair the legislative affairs committee this time around.

Haslam’s Task: The 2016 session of the General Assembly is just around the corner, convening on January 12th. And that aforesaid GOP legislative majority has seemingly peaked out at a hyper-conservative level too daunting for either of moderate GOP governor Bill Haslam’s two major wish-list items — his Insure Tennessee proposal for Medicaid (TennCare) expansion, which was blocked in the General Assembly last year, or any form of a gasoline tax to fund overdue attention to the state’s increasingly obsolete infrastructure.

State Senator Ron Ramsey, the state’s lieutenant governor and presiding officer of the Senate, usually calls the shots on such things, and he has basically declared that the Medicaid-expansion matter will not be considered until and unless an elected Republican president, post-2016, proposes the additional funding via block grants to the states.

As for the question of infrastructure improvements, a little bit of good news — a modest windfall in unexpectedly good state revenue collections — may extend the bad news of inaction on creating new funding sources for roads, bridges, and the like. Current thinking within the legislature is apparently to sprinkle the bonus funds where they are most needed but to eschew any major upgrades. — Jackson Baker

LGBT Rights

The U.S. Supreme Court’s ruling in favor of marriage equality nationwide will ensure that 2015 goes down as perhaps the most important year in the fight for LGBT rights.

But, in Tennessee (and a handful of other conservative states), the battle might not be over. The Tennessee Natural Marriage Defense Act was filed in September, and if passed, it would revert the state definition of marriage back to one man and one woman, and it would require the state attorney general to defend local government officials who refuse to recognize the Supreme Court’s marriage ruling.

“The federal government doesn’t preempt the action of legislatures. In other words, if the federal government gets wind of an unconstitutional bill being filed, they don’t send a note to the legislature saying, by the way, you can’t do that,” said Tennessee Equality Project (TEP) Executive Director Chris Sanders.

“What happens is the legislature passes its law, and it goes into effect. It harms someone, and then someone has the basis to sue the state. If passed, it could temporarily interrupt marriage equality,” he said.

Sanders believes the bill would eventually be struck down, once lawsuits make their way to the Supreme Court.

“I think they’ll lose at every turn. That’s why we all pray for [Supreme Court Justice] Ruth Bader Ginsberg every night,” Sanders said.

Sanders said TEP is also watching a state Pastor Protection Act, which would “protect religious clergy” from having to perform same-sex weddings. But he points out that such a bill would be redundant since pastors are already protected by the First Amendment.

“There could also be bills that ‘protect’ businesses from having to do business with our community, particularly wedding vendors,” Sanders said. “And another possible bill would exempt local government officials, like a county clerk, from having to serve our community. That’s a Kim Davis-style bill.”

Transgender rights also may be on the line in Tennessee in 2016. Tennessee Representative Bud Hulsey announced his intention to file a bill that would prevent transgender students from using the bathroom that corresponds with their gender identity.

Some possible bills may have a direct impact on LGBT equality in Memphis.

“We’ve heard some rumors that there could be a bill to try and undo existing local nondiscrimination ordinances, like the one in Memphis,” Sanders said.

On a more positive note, the Memphis Gay & Lesbian Community Center (MGLCC) has announced that they will launch a new program in 2016 to house homeless LGBT youth. Dubbed the Metamorphosis Project, it will employ refurbished shipping containers as transitional housing structures, and it will be the first housing project for LGBT young adults in the city. The shipping containers will be set up on property the MGLCC has purchased in Orange Mound from the Shelby County Land Bank.

“We’re going to alter the containers by adding windows and doors and making them into individual living spaces with a bedroom and a bathroom,” said MGLCC Youth Services Manager Stephanie Reyes. “And we’ll have an administration building there with a classroom, where we’ll teach classes on writing a resume, nutrition, and life skills.”

The new year will kick off with Ocsar hopefuls like The Revenant hitting Memphis screens, and the Sundance Film Festival debuting the year’s crop of indie and arthouse pictures. We’ll get to see if the long-delayed Western Jane Got a Gun starring Natalie Portman was salvaged after a troubled production. February looks livelier than usual with the Coen Brothers’ Hail, Caesar!, the Marvel comedy superhero Deadpool, and Zoolander 2, which heralds the return of Ben Stiller’s beloved male model. March gets us the Iraq War comedy/drama Whiskey Tango Foxtrot, and the long awaited Batman v Superman: The Dawn of Justice which, if the trailers are any indication, could be a historic debacle. More intriguing is the biopic I Saw the Light where Tom Hiddleston (aka Loki) plays Hank Williams.

Richard Linklater’s new film Everybody Wants Some debuts in April, as does Iron Man director Jon Favreau’s live action adaptation of The Jungle Book, which presumably has some reason to exist. Summer blockbuster season starts in earnest with the new Marvel epic Captain America: Civil War and X-Men: Apocalyspe. For the more serious-minded, there’s Snowden, the tale of the NSA whistleblower. June brings us the big-budget video game adaptation Warcraft, helmed by Moon director Duncan Jones, and the sequel to Finding Nemo, Finding Dory.

July sees Steven Spielberg’s Roald Dahl adaptation The BFG and The Legend of Tarzan, directed by Harry Potter‘s David Yates from a script penned by Memphis’ own Craig Brewer. Then the all-female Ghostbusters remake will do battle with Star Trek Beyond. In August we get the all-villain comic book oddity Suicide Squad and the story of the gulf oil spill in Deepwater Horizon.

The theme for November will be magic, with Marvel’s sorcerer supreme Doctor Strange squaring off against J.K. Rowling’s Fantastic Beasts and Where to Find Them, while Indie Memphis brings the scrappy underdogs to Memphis screens. December will be once again dominated by Star Wars with Rogue One telling the story of how Princess Leia got the plans to the Death Star.
