Popular Restaurants Mixed it up in 2021

An interesting aspect of the 2021 Memphis food scene was the number of heavy hitters making changes to their restaurants.

Kelly English decided to move his popular Restaurant Iris to the space previously occupied by The Grove Grill in Laurelwood. In June, English said in a Flyer interview that the new location is a much bigger space. “The dining room in Laurelwood is bigger than the entire property Iris is on,” he said.

He opened Pantà in Iris’ location at 2146 Monroe Avenue in October. English told the Flyer he went with a Catalonian concept. It was something he wanted to do since he took a six-month trip in his early twenties to Barcelona. “I really do love this type of food and the way they live,” he said. “And what we want is to be known as a later-night establishment.”

Explaining the name, English said, “Pantà is the Catalonian word for ‘swamp,’ which is reflected in the mural around the bar. Growing up in Louisiana, swamps played a big part of my youth. Mostly my mom trying to keep me out of them.”

English plans to open the new Iris at 4550 Poplar Avenue “right around Easter. We are thrilled to see that come together.”

Chef Jason Severs and his wife Rebecca moved Bari Ristorante e Enoteca from its old location in Cooper-Young to 524 South Cooper. The new location, which opened in August, is more than 300 square feet bigger. They can still seat 40 people in the dining room, but they also can seat 40 more outside on the patio and more people at the bar in the front of the restaurant.

The new restaurant features wide, open spaces as opposed to the old restaurant, which, Jason said in a Flyer interview, was “a bunch of different, small rooms.” And Rebecca said, “You couldn’t expand there.”

The food is the same as what they served at the old location, Jason said. “Southeastern Italian. Lots of fresh vegetables. From the earth. All local when we can.”

Chefs Andrew Ticer and Michael Hudman, who own several restaurants, reopened their popular Hog & Hominy at 707 West Brookhaven Circle after a fire in January 2020. The restaurant was rebuilt. It opened in November.

In a Flyer interview, general manager Evan Potts said the new restaurant is about twice as large. They expanded it as far as it would go in all directions.

Hudman said he told his wife how the restaurant now has an “old Art Deco diner feel.” That rings true, from its silver metal lettered sign out front to the fluted light fixtures in the dining room and the general vibe.

They are serving Neapolitan-inspired pizzas and “fun takes on traditional Italian fare,” Potts said. And their craft cocktails, which the establishment is known for.

Finally, it’s not a restaurant per se, but people have been known to eat inside. Or maybe just pop a few cashews in their mouth. The Peanut Shoppe is closing at the end of the year at its old location at 24 South Main Street, where it has stood since — co-owner Rida AbuZaineh believes — 1951, and moving to its new location at 121 South Main.

AbuZaineh told the Flyer they weren’t informed until a few months before that the building where his shop is now located was going to be sold. It will be turned into apartments and condos, he said.

The new location is similar to the current location. “The new one is rectangular shape. This one is rectangular shape but so narrow. The width is the difference … three times the width of this narrow store.”

AbuZaineh said he will be open “through Christmas Eve. It’s an excellent day if it falls on the weekend like it does this year. We are always the last people to leave the area.”

Which means Santa will have plenty of time to stock up on nuts and candy to fill all those stockings.

Hog and Hominy Opens Friday, November 5th

On entering the newly rebuilt and redesigned Hog and Hominy the other night, co-owner Michael Hudman told his wife how the restaurant has an “old Art Deco diner feel.”

From the silver metal lettered sign out front to the fluted light fixtures in the dining room and just the general vibe, the new Hog and Hominy indeed has a diner feel — a diner that serves Neapolitan-inspired pizzas instead of patty melts.

The new Hog and Hominy opens to the public Friday, November 5th.

After a fire January 9th, 2020, the new Hog and Hominy, one of the many restaurants owned by Hudman and Andrew Ticer, was rebuilt. It’s about twice as large, says general manager Evan Potts. They expanded the restaurant as far as it would go in all directions, he says. Now, entering the restaurant on the right front instead of on the left side, diners will see the bar in a separate but open area on the right and the dining room on the left.

Ticer loved the fact they had a “blank slate” to work with. They were able to “reimagine” the restaurant without being confined to the former “three bedroom house” they originally had with the pre-fire structure. They were able to “think out of the box.”

Justin Solberg is chef de cuisine at the restaurant. The fare will include “Neapolitan-inspired pizza,” Potts says. “We like to have that wood fire crust that has that little bit of toothsome-ness to it. The chew, if you will. And super thin in the middle to showcase what we put on top.”

There will be new pizzas as well as old favorites, including the Thunderbird and Red Eye.

The pizzas will be the entrees. They also will serve snacks and small plates — “Little things to share for the table.”

And, Potts says, “We do a lot of fun takes on traditional Italian fare. We like to twist it. Like taking the idea of eggplant parmesan and substituting pork belly. Italian ideas and twisting them and putting the little Southern spin on it like we do.”

They will continue to serve their craft cocktails, which Hog and Hominy is known for. For instance, Potts says, “The same old fashioned where we make the orange bitters in house.”

They also got their own barrel of Maker’s Mark whiskey from Empire Distributors to make their old fashioned cocktails.

Hog and Hominy also does its own take on the dirty martini, but instead of the usual olive juice, they make their own brine using shishito peppers, which gives it more of a “vegetable flavor,” Potts says. “You’ll still have the salty flavor, but it adds a whole other depth of flavor to it.”

2021: Here’s Looking at You

If 2020 was the year of despair, 2021 appears to be the year of hope.

Wanna see what that could look like? Cast your gaze to Wuhan, China, birthplace of COVID-19.

News footage from Business Insider shows hundreds of carefree young people gathered in a massive swimming pool, dancing and splashing at a rock concert. They are effortlessly close together and there’s not a mask in sight. Bars and restaurants are packed with maskless revelers. Night markets are jammed. Business owners smile, remember the bleak times, and say the worst is behind them. How far behind? There’s already a COVID-19 museum in Wuhan.

That could be Memphis (once again) one day. But that day is still likely months off. Vaccines arrived here in mid-December. Early doses rightfully went to frontline healthcare workers. Doses for the masses won’t likely come until April or May, according to health experts.

While we still cannot predict exactly “what” Memphians will be (can be?) doing next year, we can tell you “where” they might be doing it. New places will open their doors next year, and Memphis is set for some pretty big upgrades.

But it doesn’t stop there. “Memphis has momentum” was Memphis Mayor Jim Strickland’s catchphrase as he won a second term for the office last October. It did. New building projects bloomed like the Agricenter’s sunflowers. And it still does. Believe it or not, not even COVID-19 could douse developers’ multi-million-dollar optimism on the city.

Here are few big projects slated to open in 2021:

Renasant Convention Center

Throughout 2020, crews have been hard at work inside and outside the building once called the Cook Convention Center.

City officials and Memphis Tourism broke ground on a $200-million renovation project for the building in January 2020. The project will bring natural light and color to the once dark and drab convention center built in 1974. The first events are planned for the Renasant Convention Center in the new year.

Memphis International Airport

Expect the ribbon to be cut on Memphis International Airport’s $245-million concourse modernization project in 2021. The project was launched in 2014 in an effort to upgrade the airport’s concourse to modern standards and to right-size the space after Delta de-hubbed the airport.

Once finished, all gates, restaurants, shops, and more will be located in a single concourse. The space will have higher ceilings, more natural light, wider corridors, moving walkways, children’s play areas, a stage for live music, and more.

Collage Dance Collective

The beautiful new building on the corner of Tillman and Sam Cooper is set to open next year in an $11-million move for the Collage Dance Collective.

The 22,000-square-foot performing arts school will feature five studios, office space, a dressing room, a study lounge, 70 parking spaces, and a physical therapy area.

The Memphian Hotel

A Facebook post by The Memphian Hotel reads, “Who is ready for 2021?” The hotel is, apparently. Developers told the Daily Memphian recently that the 106-room, $24-million hotel is slated to open in April.

“Walking the line between offbeat and elevated, The Memphian will give guests a genuine taste of Midtown’s unconventional personality, truly capturing the free spirit of the storied art district in which the property sits,” reads a news release.

Watch for work to begin next year on big projects in Cooper-Young, the Snuff District, Liberty Park, Tom Lee Park, and The Walk. — Toby Sells

Book ‘Em

After the Spanish flu epidemic and World War I came a flood of convention-defying fiction as authors wrestled with the trauma they had lived through. E.M. Forster confronted colonialism and rigid gender norms in A Passage to India. Virginia Woolf published Mrs. Dalloway. James Joyce gave readers Ulysses. Langston Hughes’ first collection, The Weary Blues, was released.

It’s too early to tell what authors and poets will make of 2020, a year in which America failed to contain the coronavirus. This reader, though, is eager to see what comes.

Though I’ve been a bit too nervous to look very far into 2021 (I don’t want to jinx it, you know?), there are a few books already on my to-read list. First up, I’m excited for MLK50 founding managing editor Deborah Douglas’ U.S. Civil Rights Trail, due in January. Douglas lives in Chicago now, but there’s sure to be some Memphis in that tome.

Next, Ed Tarkington’s The Fortunate Ones, also due in January, examines privilege and corruption on Nashville’s Capitol Hill. Early reviews have compared Tarkington to a young Pat Conroy. For anyone disappointed in Tennessee’s response to any of this year’s crises, The Fortunate Ones is not to be missed.

Most exciting, perhaps, is the forthcoming Black Panther: Tales of Wakanda prose anthology, expected February 2nd. The anthology is edited by Memphis-born journalist Jesse J. Holland, and also features a story by him, as well as Memphians Sheree Renée Thomas, Troy L. Wiggins, and Danian Darrell Jerry.

“To be in pages with so many Memphis writers just feels wonderful,” Thomas told me when I called her to chat about the good news. “It’s a little surreal, but it’s fun,” Jerry adds, explaining that he’s been a Marvel comics fan since childhood. “I get to mix some of those childhood imaginings with some of the skills I’ve worked to acquire over the years.”

Though these books give just a glimpse at the literary landscape of the coming year, if they’re any indication of what’s to come, then, if nothing else, Memphians will have more great stories to look forward to. — Jesse Davis

Take Me Out With the Crowd

Near the end of my father’s life, we attended a Redbirds game together at AutoZone Park. A few innings into the game, Dad turned to me and said, “I like seeing you at a ballpark. I can tell your worries ease.”

Then along came 2020, the first year in at least four decades that I didn’t either play in a baseball game or watch one live, at a ballpark, peanuts and Cracker Jack a soft toss away. The pandemic damaged most sports over the last 12 months, but it all but killed minor-league baseball, the small-business version of our national pastime, one that can’t lean on television and sponsorship revenue to offset the loss of ticket-buying fans on game day. AutoZone Park going a year without baseball is the saddest absence I’ve felt in Memphis culture since moving to this remarkable town in 1991. And I’m hoping today — still 2020, dammit — that 2021 marks a revival, even if it’s gradual. In baseball terms, we fans will take a base on balls to get things going before we again swing for the fences.

All indications are that vaccines will make 2021 a better year for gathering, be it at your favorite watering hole or your favorite ballpark. Indications also suggest that restrictions will remain in place well into the spring and summer (baseball season). How many fans can a ballpark host and remain safe? How many fans will enjoy the “extras” of an evening at AutoZone Park — that sunset over the Peabody, that last beer in the seventh inning — if a mask must be worn as part of the experience? And what kind of operation will we see when the gates again open? Remember, these are small businesses. Redbirds president Craig Unger can be seen helping roll out the tarp when a July thunderstorm interrupts the Redbirds and Iowa Cubs. What will “business as usual” mean for Triple-A baseball as we emerge from the pandemic?

I wrote down three words and taped them up on my home-office wall last March: patience, determination, and empathy. With a few more doses of each — and yes, millions of doses of one vaccine or another — the sports world will regain crowd-thrilling normalcy. For me, it will start when I take a seat again in my happy place. It’s been a long, long time, Dad, since my worries properly eased.— Frank Murtaugh

Film in 2021: Don’t Give up Hope

“Nobody knows anything.” Never has William Goldman’s immortal statement about Hollywood been more true. Simply put, 2020 was a disaster for the industry. The pandemic closed theaters and called Hollywood’s entire business model into question. Warner Brothers’ announcement that it would stream all of its 2021 offerings on HBO Max sent shock waves through the industry. Some said it was the death knell for theaters.

I don’t buy it. Warner Brothers, owned by AT&T and locked in a streaming war with Netflix and Disney, are chasing the favor of Wall Street investors, who love the rent-seeking streaming model. But there’s just too much money on the table to abandon theaters. 2019 was a record year at the box office, with $42 billion in worldwide take, $11.4 billion of which was from North America. Theatrical distribution is a proven business model that has worked for 120 years. Netflix, on the other hand, is $12 billion in debt.

Will audiences return to theaters once we’ve vaccinated our way out of the coronavirus-shaped hole we’re in? Prediction at this point is a mug’s game, but signs point to yes. Tenet, which will be the year’s biggest film, grossed $303 million in overseas markets where the virus was reasonably under control. In China, where the pandemic started, a film called My People, My Homeland has brought in $422 million since October 1st. I don’t know about y’all, but once I get my jab, they’re going to have to drag me out of the movie theater.

There will be quite a bit to watch. With the exception of Wonder Woman 1984, the 2020 blockbusters were pushed to 2021, including Dune, Spielberg’s West Side Story remake, the latest James Bond installment No Time to Die, Marvel’s much-anticipated Black Widow, Top Gun: Maverick, and Godzilla vs. Kong. Memphis director Craig Brewer’s second film with Eddie Murphy, the long-awaited Coming 2 America, will bow on Amazon March 5th, with the possibility of a theatrical run still in the cards.

There’s no shortage of smaller, excellent films on tap. Regina King’s directorial debut One Night in Miami, about a meeting between Malcolm X, Muhammad Ali, Sam Cooke, and Jim Brown, premieres January 15th. Minari, the stunning story of Korean immigrants in rural Arkansas, which was Indie Memphis 2020’s centerpiece film, lands February 12th. The Bob’s Burgers movie starts cooking April 9th. And coolest of all, next month Indie Memphis will partner with Sundance to bring the latest in cutting-edge cinema to the Malco Summer Drive-In. There’s plenty to be hopeful for in the new year. — Chris McCoy

Looking Ahead: Music

We usually highlight the upcoming hot concerts in this space, but those are still on the back burner. Instead, get a load of these stacks of hot wax (and streams) dropping next year. Remember, the artists get a better share when you purchase rather than stream, especially physical product like vinyl.

Julien Baker

One of the biggest-profile releases will be Julien Baker’s Little Oblivians, due out on Matador in February. Her single “Faith Healer” gives us a taste of what to expect. Watch the Flyer for more on that soon. As for other drops from larger indie labels, Merge will offer up A Little More Time with Reigning Sound in May (full disclosure: this all-Memphis version of the band includes yours truly).

Closer to home, John Paul Keith’s The Rhythm of the City also drops in February, co-released by hometown label Madjack and Italian imprint Wild Honey. Madjack will also offer up albums by Mark Edgar Stuart and Jed Zimmerman, the latter having been produced by Stuart. Matt Ross-Spang is mixing Zimmerman’s record, and there’s much buzz surrounding it (but don’t worry, it’s properly grounded).

Jeremy Stanfill mines similar Americana territory, and he’ll release new work on the Blue Barrel imprint. Meanwhile, look for more off-kilter sounds from Los Psychosis and Alicja Trout’s Alicja-Pop project, both on Black & Wyatt. That label will also be honored with a compilation of their best releases so far, by Head Perfume out of Dresden. On the quieter side of off-kilter, look for Aquarian Blood’s Sending the Golden Hour on Goner in May.

Bruce Watson’s Delta-Sonic Sound studio has been busy, and affiliated label Bible & Tire Recording Co. will release a big haul of old-school gospel, some new, some archival, including artists Elizabeth King and Pastor Jack Ward, and compilations from the old J.C.R. and D-Vine Spiritual labels. Meanwhile, Big Legal Mess will drop new work from singer/songwriter Alexa Rose and, in March, Luna 68 — the first new album from the City Champs in 10 years. Expect more groovy organ and guitar boogaloo jazz from the trio, with a heaping spoonful of science-fiction exotica to boot.

Many more artists will surely be releasing Bandcamp singles, EPs, and more, but for web-based content that’s thinking outside of the stream, look for the January premiere of Unapologetic’s UNDRGRNDAF RADIO, to be unveiled on weareunapologetic.com and their dedicated app. — Alex Greene

Perhaps a bit hyperbolic, but the image that pops into my head when thinking about restaurants in 2020 are the contagion-esque geo-domes that Karen Carrier set up on the back patio of the Beauty Shop. A clever conceit, but also a necessary one — a move designed to keep diners safe and separated when going out to eat. If it all seems a little bizarre, well, that’s what 2020 was thanks to COVID-19.

We saw openings, closings, restrictions, restrictions lifted, restrictions then put back in place; the Memphis Restaurant Association and Shelby County Health Department arguing back and forth over COVID guidelines, with both safety and survival at stake; and establishments scrambling to find creative ways to drum up business. The Beauty Shop domes were one such example. The Reilly’s Downtown Majestic Grille, on the other hand, transformed into Cocozza, an Italian ghost concept restaurant put into place until it was safe to reopen Majestic in its entirety. Other places, like Global Café, put efforts in place to help provide meals to healthcare professionals or those who had fallen into financial hardship during the pandemic.

Unfortunately, not every restaurant was able to survive the pandemic. The popular Lucky Cat Ramen on Broad Ave. closed its doors, as did places like Puck Food Hall, 3rd & Court, Avenue Coffee, Midtown Crossing Grill, and many others.

But it wasn’t all doom and gloom. Working in the hospitality business requires a certain kind of resilience, and that showed up in spades. Many restaurants adapted to new regulations quickly, and with aplomb, doing their best to create a safe environment for hungry Memphians all while churning out takeout and delivery orders.

And even amid a pandemic backdrop, many aspiring restaurateurs tried their hand at opening their own places. Chip and Amanda Dunham branched out from the now-closed Grove Grill to open Magnolia & May, a country brasserie in East Memphis. Just a few blocks away, a new breakfast joint popped up in Southall Café. Downtown, the Memphis Chess Club opened its doors, complete with a full-service café and restaurant. Down in Whitehaven, Ken and Mary Olds created Muggin Coffeehouse, the first locally owned coffee shop in the neighborhood. And entrepreneurial-minded folks started up their own delivery-only ventures, like Brittney Adu’s Furloaved Breads + Bakery.

So what will next year bring? With everything thrown out of whack, I’m loath to make predictions, but with a vaccine on the horizon, I’m hoping (fingers crossed) that it becomes safer to eat out soon, and the restaurant industry can begin a long-overdue recovery. And to leave you with what will hopefully be a metaphor for restaurants in 2021: By next summer, Andy Ticer and Michael Hudman’s Hog & Hominy will complete its Phoenician rebirth from the ashes of a disastrous fire and open its doors once again.

“Your Tickets Will be at Will Call”

Oh, to hear those words again, and plenty of arts organizations are eager to say them. The pandemic wrecked the seasons for performing arts groups and did plenty of damage to museums and galleries.

Not that they haven’t made valiant and innovative efforts to entertain from afar with virtual programming.

But they’re all hoping to mount physical, not virtual, seasons in the coming year.

Playhouse on the Square suspended scheduled in-person stage productions until June 2021. This includes the 52nd season lineup of performances that were to be on the stages of Playhouse on the Square, The Circuit Playhouse, and TheatreWorks at the Square. It continues to offer the Playhouse at Home Series, digital content via its website and social media.

Theatre Memphis celebrates its 100th anniversary in 2021 and is eager to show off its new facility, a major renovation that was going to shut it down most of 2020 anyway while it expanded common spaces and added restrooms and production space while updating dressing rooms and administrative offices. But the hoped-for August opening was pushed back, and it plans to reschedule the programming for this season to next.

Hattiloo Theatre will continue to offer free online programming in youth acting and technical theater, and it has brought a five-week playwright’s workshop and free Zoom panel discussions with national figures in Black theater. Like the other institutions, it is eager to get back to the performing stage when conditions allow.

Ballet Memphis has relied on media and platforms that don’t require contact, either among audience members or dancers. But if there are fewer partnerings among dancers, there are more solos, and group movement is well-distanced. The organization has put several short pieces on video, releasing some and holding the rest for early next year. It typically doesn’t start a season until late summer or early fall, so the hope is to get back into it without missing a step.

Opera Memphis is active with its live Sing2Me program of mobile opera concerts and programming on social media. Its typical season starts with 30 Days of Opera in August that usually leads to its first big production of the season, so, COVID willing, that may emerge.

Museums and galleries, such as the Dixon Gallery & Gardens, Memphis Brooks Museum of Art, National Civil Rights Museum, and the Metal Museum are functioning at limited capacity, but people can go and enjoy the offerings. The scope of the shows is limited, as coronavirus has put the kibosh on blockbuster shows for now. Look for easing of protocols as the situation allows in the coming year. — Jon W. Sparks

Oyez. Oyez. Oh yes, there is one year out of every four in which regularly scheduled elections are not held in Shelby County, and 2021 is such a year. But decisions will be made during the year by the Republican super-majority of the state legislature in Nashville that will have a significant bearing on the elections that will occur in the three-year cycle of 2022-2024 and, in fact, on those occurring through 2030.

This would be in the course of the constitutionally required ritual during which district lines are redefined every 10 years for the decade to come, in the case of legislative seats and Congressional districts. The U.S. Congress, on the basis of population figures provided by the U.S. Census Bureau, will have allocated to each state its appropriate share of the 435 members of the U.S. House of Representatives. And the state legislature will determine how that number is apportioned statewide. The current number of Tennessee’s Congressional seats is nine. The state’s legislative ratio is fixed at 99 state House members and 33 members of the state Senate.

Tennessee is one of 37 states in which, as indicated, the state legislature calls the shots for both Congressional and state redistricting. The resultant redistricting undergoes an approval process like any other measure, requiring a positive vote in both the state Senate and the state House, with the Governor empowered to consent or veto.

No one anticipates any disagreements between any branches of government. Any friction in the redistricting process will likely involve arguments over turf between neighboring GOP legislators. Disputes emanating from the minority Democrats will no doubt be at the mercy of the courts.

The forthcoming legislative session is expected to be lively, including holdover issues relating to constitutional carry (the scrapping of permits for firearms), private school vouchers (currently awaiting a verdict by the state Supreme Court), and, as always, abortion. Measures relating to the ongoing COVID crisis and vaccine distribution are expected, as is a proposal to give elected county executives primacy over health departments in counties where the latter exist.

There is no discernible disharmony between those two entities in Shelby County, whose government has devoted considerable attention over the last year to efforts to control the pandemic and offset its effects. Those will continue, as well as efforts to broaden the general inclusiveness of county government vis-à-vis ethnic and gender groups.

It is still a bit premature to speculate on future shifts of political ambition, except to say that numerous personalities, in both city and county government, are eyeing the prospects of succeeding Memphis Mayor Jim Strickland in 2023. And several Democrats are looking at a potential race against District Attorney General Amy Weirich in 2022.

There are strong rumors that, after a false start or two, Memphis will follow the lead of several East Tennessee co-ops and finally depart from TVA.

And meanwhile, in March, the aforesaid Tennessee Democrats will select a new chair from numerous applicants. — Jackson Baker

Award-Winning Chefs Ticer and Hudman Talk Bishop, the Fire at Hog & Hominy, and More

Andy Ticer and Michael Hudman have been busy opening a new restaurant, reacting to a fire at Hog & Hominy, and being honored by the James Beard Awards. Here’s a look at what’s happening with the award-winning chef team.

MF: How does your new restaurant, Bishop, complement or contribute to the presence of French cuisine in Memphis?

Hudman: Memphis is always, to us, a place that starts by acknowledging where we come from. French cooking is rooted in that same style of techniques, passed down, done right. It’s about mentorship. These are things that we value in our company. We’re always looking for ways to build our people, and this was a natural entry point. When the idea came to us, it just made sense to flex those old muscles as a callback to where we started. The moment that we saw the space that Natalie Lieberman had designed and the collateral and branding from Loaded for Bear, it clicked. We’d wanted to do a French brasserie for a while, and here it all was, ready to go.

Ticer: It’s funny. My brother Olivier is from France, and he just happened to be in town the week we soft opened. He told us that, often, brasseries are attached to train stations and breweries, and here we were opening one in a train station. It just made sense. We have our homage to Downtown trattorias at Catherine & Mary’s, our riffs on Southern food and oysters from the fire at The Gray Canary, and then our classic French spot attached to a train station.

What was it like opening a restaurant in the Central Station Hotel?

Ticer: There are challenges to opening any restaurant, but a restaurant in a hotel is a fun experience. We have to focus on all aspects of the food and beverage, from Eight & Sand and Bishop, to the events in the Grand Hall. The biggest challenge is that we really opened three spaces at once, so there are a lot of moving parts that needed to be focused on all at once.

Hudman: For us, it’s all about assembling the right team who can carry that culture of our restaurants. We want everything to feel like it was paid attention to and thought about for our guests, and that takes some time to get right. We opened in the middle of the holiday season, too, which was pretty intense.

How did your experience at Chez Phillippe contribute to the development of the menu and culture at Bishop?

Ticer: Chez Phillippe was such an amazing experience where we really learned to cook and really understood for the first time what it meant to cook with high standards. Chef Jose Gutierrez taught us so much about how to cook, how to pay attention to the details. A lot of the traditional menu items we first tasted cooking there, and after, when we were in Lyon, we were like, “Oh, this is how that started.”

What are some menu recommendations you would make for someone visiting Bishop for the first time?

Hudman: That’s always so hard because we love everything. But the tinned seafood is really special and really specific to European cuisine. We have a lot of classic items to French cooking that we’re not trying to reinvent the wheel on, just make it properly. Salade Lyonnaise, French onion soup, tarte flambée, the raclette. It’s about the classic preparation, and we had fun testing until we had it right.

Ticer: I love to start with the grand aioli or the escargot, and the spinalis is beautiful. But there are lots of things. I think go in with an open mind and try things you haven’t heard of. And drink some wine! Ryan Radish, our wine director, really had a field day putting together this 150-bottle, all-French list that is really beautiful and fun to drink from.

How does Bishop benefit from being part of the Central Station Hotel?

Ticer: When we first met with McLean Wilson about the hotel and he gave us his vision of it, we were like, yeah, this will be a cool thing to be a part of, a place that celebrates Memphis and really feels local. We really appreciated that McLean wanted us to open our restaurant inside the hotel and not the other way around, a hotel restaurant. It allows us a lot of freedom to do exciting and fun things with the menu. Just like our experience with Ace, there’s a lot of infrastructure that the hotel has that gives us the ability to do things we’ve never done before, including working with these awesome design teams. Because the hotel really wants to function as the living room of South Main, we see a lot of guests from all over, but we’re still a part of the fabric of South Main and the Memphis community, rather than separate from it.

Another of your restaurants, Hog & Hominy, suffered an electrical fire earlier this year. How has the restaurant and the staff recovered since then?

Hudman: It’s been a real process. Our first priority was to get everyone working, and we met with everyone as a group, and individually, to make sure they were happy going to another restaurant. Our team was loyal to Hog & Hominy, and none of them wanted to leave, but they understood and are now doing their thing throughout the company. They’ve added a lot, too, to those restaurants, and when they come back for the reopening, they’re going to have learned a lot. It’s like an extended externship for them.

Ticer: We’re going through the insurance process now, which can be pretty frustrating at times. But what we know is that we’re bringing the existing structure down and starting over. Fitting Hog & Hominy into a ranch house was always something we were working around, even during the remodel that started last year. So now, we’re starting over with a blank slate. It will always need to feel like the old Hog & Hominy, but we have an opportunity to address things like comfortable chairs, noise, kitchen layout, server stations. It’s going to take longer than we hoped, but we’re not afraid of taking our time to get it right.

The James Beard Awards are an extremely high honor, recognizing chefs and restaurateurs from across the country. How did it feel to be named semifinalists once again — and also to be the only semifinalists from Memphis?

Hudman: It’s a huge honor to be on the list. I mean, just looking over the list of the chefs on there from our region and around the country, it’s really humbling to see your name on there. Our teams work so hard to produce in the restaurants, so while it is our name, it’s a nod to them as well. We can’t do it without them.

Ticer: Memphis is growing around the country as a place to come and visit, to see, to move to. We’re a city of history, culture, and great food in all kinds of restaurants. It’s an honor to represent that on a stage like the James Beard Awards.

What’s it like representing Memphis cuisine to those who may not be familiar, or who might think of Memphis food as just barbecue and fried chicken?

Ticer: You know, I think that Memphis might be known for barbecue and fried chicken, but we think of Memphis food as coming from the family table. It’s about feeding people because you care. We grew up and got into food because of our grandmothers and our family meals. Sure, you might get yelled at, but there was always good food, and everything came from a place of love. If we can make people feel cared for, then we’re showing them what Memphis food is.

What’s next for the Andy Ticer and Michael Hudman team?

Hudman: We are mainly focused on getting Hog & Hominy back open, but we do have lots in the pipeline. We’re just about finished with the redesign of the interiors at Andrew Michael Italian Kitchen that Natalie Lieberman has headed up. We’re trying to make that restaurant feel updated and even more comfortable for our guests. And we have some plans to move into Catherine & Mary’s for some adjustments as well. It’s been running for four years and needs a little love. Mainly, we’re focusing on making sure that the restaurants feel good for the guests and work for the staff.

Bishop Restaurant Slated to Open in Mid-December in Central Station Hotel

Meet “Bishop,” the newest restaurant brought to you by Andrew Ticer and Michael Hudman, chef/owners of Catherine & Mary’s, The Gray Canary, Andrew Michael Italian Kitchen, Hog & Hominy, and Josephine Estelle in New Orleans.

Bishop, a 3,500 square-foot space in the Central Station Hotel on the corner of South Main and G. E. Patterson, is slated to open to the public in mid-December.

It was named Bishop after the late Church of God in Christ Bishop G. E. Patterson.

The food will be French brasserie style served in a “more upscale environment,” says assistant general manager Pablo Villarreal. But still in a “more casual setting.”

Guests will start with “le comptoir” (the counter), which are “snacks high in acid and salt that will be great to start off to cleanse your palette and get you ready to enjoy the menu,” Villarreal says. These will include tinned seafood, which are “delicacies common in France – baby eel, baby squid, and calamari.”

They then will move on to “petite plats” (small plates), which include escargot and oysters, and “grand plats” (large plates), which include steak au poivre, chateaubriand, and lamb chops.

Desserts, including crepe cake, will be made in house by chef Kayla Palmer.

Ticer and Hudman always wanted to open a French restaurant. They worked under chef Jose Gutierrez (River Oaks chef/owner) for five years at Chez Philippe in The Peabody. “We learned our palette from him,” Ticer says.

He and Hudman fell in love with the French “philosophy and approach to food” when they went to cooking school in Southern France.

Bishop seats 130, the bar area seats 18, and a private dining room seats 18, says general manager Emily Stanford.

The interior, with its black-and-white Cathedral style flooring and lots of windows, is a perfect accompaniment to the food. The approach was “keep the old train station feel,” Villarreal says. As if you’re “still in a train station having a drink.”

Natalie Lieberman of Collect+Curate Studio with the help of art consultant Anna Wunderlich designed the interior of Bishop.

Lieberman says she “started with a story” when she began work on the restaurant. “The only info I had was the name ‘Bishop,’” she says. She began to “create a narrative.”

Earthly elements, including leaves and mushrooms, combine with objects, including keys and bells, that go along with “Bishop,” Lieberman says.

There’s also a “spiritual underlying theme” with the stars, beads, and tarot cards, she says.

Butch Anthony of the Museum of Wonder in Alabama created the hand painting in the dining room.

“Moody and rich and textured” was the feel she was going for at Bishop, Lieberman says.

She succeeded.

Eight & Sand Opens in Central Station Hotel

Eight & Sand opens October 24th.

Eight & Sand opens at 4 p.m. Thursday, October 24th in Central Station Hotel.

The sleek, new bar fills up the train station’s old waiting room. Travelers still can wait in the old space, but now they can wait in groupings of four to eight people at mixed Mid-Century-style tables and chairs and sip classic drinks, including martinis and Manhattans. They also can try a “Memphis Bell,” “Hurricane Elvis,” and “Knuck if you Buck” cocktails.

They also can listen to Memphis music.

The restaurant is by Andrew Michael and Andrew Ticer, who brought you Andrew Michael Italian Kitchen, The Gray Canary, Catherine & Mary’s, and Hog & Hominy restaurants. Ticer and Hudman partnered with Central Station Hotel to do the bar and the upcoming Bishop restaurant, which is slated to open November 15th.

“Eight” is the highest throttle or “top speed” on the train and “Sand” stands for the sand they used to throw on the tracks so the train wheels wouldn’t slip, says Central Station Hotel food and beverage director Evan Potts. So, the name means “wish you a safe and speedy journey.”

The also Mid-Century looking bar features 10 seats as well as seats for the disabled.

The emphasis is on cozy. The vibe for Eight & Sand is “the living room of South Main.”

The look of the room is “clean” without feeling “sterile,” Potts says. “It’s so warm and so fun.”

They want Eight & Sand to be where people stop for a drink before a show at The Orpheum or other venue and then re-visit it after the performance or game, he says.

The bar menu will include “small snacks” or “share-ables,” Potts says. These will include the pimento puffed pastry, which was a popular item at the old Ticer/Hudman restaurant,  Porcellino’s Craft Butcher.

All the music is either recorded in Memphis, by Memphis artists, or about Memphis, Potts says. The console in the deejay booth is an old organ.

Vinyl records will be played by deejays, but programmed Memphis music also will be played when deejays aren’t in the booth.

So, what’s the first song to be played at the opening? “Probably ‘Melting Pot,’’” says music curator/head deejay Chad Weekley. The Booker T. & the M.G.s song is “a good track,” Weekley says. And, he says, the song “sums up our city.”

The Bird’s the Word

Over the weekend, a man was arrested for stabbing a gas station worker over “bad chicken.” Now we’re not ones to condone violence —no stabbing! — but people around these parts have certain expectations that their chicken is going to be good.

This issue is all about good chicken. Plenty of words have been written about Gus’s and Uncle Lou’s, so we decided to explore Memphis’ other chicken avenues. We guarantee that you’ll be hungry after reading this.

If heaven ain’t a lot like The Dirty Crow Inn, I don’t want to go. (I checked, and it’s fine to rip off Bocephus when you’re talking chicken. “He wouldn’t mind,” is what the rule book says.)

I’d heard tell of a chicken Philly sandwich at the Inn. It’s a special sometimes, the bar man told me, but not part of the regular menu. At that low moment, a ray of hope cut those rainy clouds — the word “debris.”

The Inn keepers have called it the “Chicken Debris PoBoy” online, but the Dirty Crow menu said, “smoked chicken debris” sandwich. To me, debris is debris any way you cut it (or don’t, I guess). And I’ve seen it swimming in the serving pan at Mother’s, the famed New Orleans restaurant that invented debris (the term anyway).

My sandwich at the Dirty Crow was every bit a po’boy, beautifully smoked chicken bathed in an earthy brown gravy riding two light (and lightly toasted) pieces of French bread from Gambino’s, that fine and famed New Orleans bakery.

Sometimes “smoked” menu items, even in Memphis, don’t taste that way. The Crow’s chicken debris sandwich does not leave you guessing. Its smoke flavor is present but delicate, the way it ought to be. It blends seamlessly with that gravy and a nice dose of melted cheese that pulls away in a pizza-commercial string as you pull the sandwich from your mouth.

The place is heaven for dive-bar aficionados (like me). The food makes it a before-you-die destination for all Memphians. — Toby Sells

Fried Chicken @ Cash Saver

Sometimes, you just gotta have fried chicken. Last week, I was so desperate I went to the KFC drive-thru and ordered a box. “Thlbetwtyminawtfcxx” came back over the microphone.

“What?”

“What?”

After several attempts, the fellow managed to get the message to me: “There will be a 20-minute wait for chicken.” Right. At a chicken restaurant. So …

I’ve been hearing about Cash Saver’s fried chicken for more than a year now. Midtowners who I know and trust have said to me, “That fried chicken is the real deal. And cheap!” Some said it was the best in town. I don’t know about that, but I’m here to tell you, they were right about it being very good. And very cheap.

I ordered two breasts and two thighs. Total cost? $5.19.

The pieces were very large, crispy on the outside and perfectly moist on the inside. The flavor of the skin was savory, lightly seasoned but with a little bite. In short, great fried chicken — the real deal. Highly recommended. I’ll be back for more. — Bruce VanWyngarden

Romaine Salad with Chicken Skins @ Hog & Hominy

Anytime I see someone slip off and discard the skin from an otherwise perfect piece of fried or baked chicken (but especially fried), I inwardly pray for their poor soul and wonder who it was that set you down a path of self-deprivation.

It’s not only that they are missing out on some heart-healthy unsaturated fats, it’s that they might still fall victim to this woefully false myth that this is something you have to do to make your chicken healthy enough to consume (spoiler, it’s not).

Well, someone at Hog & Hominy decided, “Screw that, we’re devoting a dish solely to chicken skins.” And just to round it out, lest the consumer grew up under the anti-skin mythology, that someone decided to build their chicken dermis homage on a bed of Romaine lettuce.

The result is an unexpectedly cohesive salad, misleadingly and simply titled, “Romaine.” The chicken skins used are more akin to a pork rind rather than the double-breaded crunchiness of most fried chicken pieces. These puffy morsels are strewn atop a decent portion of lettuce, which is in turn covered in snowy Parmesan and drizzled with pecorino vinaigrette.

The skins are lightly seasoned so the vinaigrette can come in and work its magic by introducing a low level of spice and tang, two flavors that pair surprisingly well with the fried fat essence of the skins. The Romaine lettuce does what Romaine was put on this earth to do, namely, trick us into thinking we’re consuming something mega-healthy when we are not. And, of course, it’s the perfect semi-crunchy vehicle that supports the crispiness of the skins.

Be warned, though, this is not the type of salad loaded down with auxiliary vegetables and croutons. It’s not going to fill you up. But it will deliver piquancy worthy of what I have determined to be the greatest part of the chicken.

Chicken Tamales from Tacqueria La Guadalupana food truck

Tamales were among the earliest food imports from south of the border to make it onto Norde Americano menus, and they remain a staple, whether in supermarket cans or on restaurant tables. Something of a debate rages as to whether the meat base in those wraparound masa cylinders should be beef or pork, but there is a third possibility — chicken — and a good place to sample it is from the Tacqueria La Guadalupana food truck that sets up daily on the north side of the shopping-center lot where Cordova Road intersects with Germantown Parkway — in an area that is more multi-ethnic than you might imagine. (The internationally focused Cordova Farmers Market is the big-box anchor on the lot.)

The La Guadalupana truck offers numerous cooked-while-you-wait specialties, several involving chicken. Order tamales, and what you get, for a mere $7.99, is three YUGE tamales, each with a generous and succulently breaded tortilla coating, within which is packed none of that minced mystery-meat filling you get at so many places, but steamed and tender morsels of freshly carved, fresh-off-the-bone-looking chicken meat. Two sauces are available as condiments, the green one appears to mix guacamole with chili; the red one (maybe laced with habanero) is scalding hot.

Wood Roasted Half Chicken @
The Kitchen Bistro

Served in a round ceramic casserole the color of red clay, the Kitchen’s wood-roasted chicken earns it $29 price tag with looks, smarts, and personality. First, cornbread panzanella sets the dish with a seasonal cacophony of tomatoes, onions, and olives. Next comes the chicken, brined, flattened, and wood-roasted to a deep and rustic char. And what swirls on top with magical brushstrokes of taste and color? The dressing, a pesto of sorts made with garlic, olive oil, lemon, and anchovies. “You don’t want to eat the chicken and think the chicken tastes like fish,” explains head Chef Dennis Phelps. “You want to eat the chicken and think the chicken tastes delicious.” — Pamela Denney

General Tso’s Chicken @ Mulan

It’s a conundrum every office has had to face as they order takeout lunch: What’s the deal with General Tso’s Chicken? Who was the eponymous military man? What’s his connection with poultry? How do you even pronounce it?

If these questions have ever prompted debate at your workplace, take heart. The answers are out there, in the form of Ian Cheney and Jennifer Lee’s 2014 documentary The Search for General Tso. It’s a fascinating look into the ways immigrant communities adapt to American life that also tells you everything you need to know about the sweet and spicy Hunan-style dish which, it turns out, is virtually unknown in China.

The first two things I noticed about the General Tso’s Chicken at Mulan is that the garnish contained a glowing LED and a dearth of broccoli on the plate. Many Chinese restaurants include plentiful broccoli with the stir-fried dark meat, and the florets come in handy for sopping up the sauce that gives the dish its deep red color. But once I bit into the succulent chunks of chicken, I realized the vegetable would have been a distraction from the main show. Each morsel was just a little crispy on the outside, tender on the inside. It was outstanding. I got the standard spice level for scientific purposes, so the sweetness and heat were finely balanced. But if you like it spicy, they’ll be more than happy to oblige.

I’m aware of no other restaurant in Memphis where one can dine surrounded by paintings of the late, great Prince hung on purple walls. I discovered the promised land, and it’s named HM Dessert Lounge. The restaurant’s focus is in its name, with one exception: chicken and waffles.

The chicken is dipped in double honey hot sauce, Jamaican jerk sauce, or spicy peach glaze. It’s then paired with a regular, cornbread, honey butter biscuit, blueberry, sweet potato, or a maple bacon waffle. Options, indeed.

I settled on four chicken breasts bathed in double hot honey sauce and coupled with a maple bacon encrusted waffle — $12 well spent. Sticky as it is, the hot honey sauce slides from the chicken and blends with the maple syrup, creating a sweet and spicy combination that brings magic to a dish which otherwise would have been too obvious. The chicken isn’t flaky but smooth, and each piece shines beneath the sauce. Slice the waffle, cut the chicken, and fork ’em together. Sauce and syrup united, the waffle coats the chicken, and bacon bits provide a necessary crunch.— Joshua Cannon

Smoke Chicken @ Picosos

There are fewer words in the English language sadder than, “Sorry, not today.” Especially if those words are spoken with genuine disappointment in a Mexican accent at Picosos, a terrific little south-of-the-border diner on Summer Avenue. The restaurant’s “Smoke Chicken” is an old-Memphis-meets-old-Mexico delicacy that sells fast, is only available on the weekends, and so succulent and good it’s worth heading out early to get your order in before the Saturday lunch crowd arrives. Served with rice and refried beans and topped with a handful of french fries, the meal is exactly what it sounds like — a quarter, half, or whole chicken covered with a heady-not-hot spice rub that’s a little on the salty side and slow-smoked to barbecue-lover’s perfection. It’s tempting to just wolf the whole thing down, but advisable to savor every spicy, smoky, chickeny bite. — Chris Davis

The Family Chicken Dinner @ SuperLo

It was a snobby Midtowner’s dilemma.

Our Target basket was full. The kids were getting pissy. We were all hungry, but the grown-ups didn’t want to make lunch.

“But there’s nothing to eat in East Memphis,” we whined without saying a word.

Wheeling through the parking lot, my wife caught a scent on the wind. “Oh my god, somebody’s fried chicken smells GOOD!” she said. We both whirled, like castaways searching the skies for a rescue plane.

The only thing that made sense was the deli counter of the Target-adjacent SuperLo. We’d been there infrequently, but I thought I remembered a big deli case. I remembered correctly.

The star of the SuperLo show was a fried chicken dinner, perfect for a Sunday lunch. Plenty of dark-brown-fried breasts and thighs lined a warming tray. But we wanted the eight-piece meal and the case offerings would not do for our wonderful deli helper.

“Nuh-uh. Give me two minutes, baby,” the woman said to my wife. “I’m going to make you up some fresh.”

Two minutes later, she filled a white, cardboard service box with two breasts, two thighs, two drummies, and two wings, like a Memphis-style Noah’s Ark. That Ark came with big-ole sides of green beans, mashed potatoes, and four King’s Hawaiian rolls. (They even added two cookies for my son. No charge.)

The chicken was crunchy-crispy on the outside, fork-tender and moist on the inside, warmly spiced, but not too spicy. It was that eye-rolling, soul-feeding, conversation-stopping, back-home-style kind of good. And all of it for about $14.

Fried Buffalo Chicken Slider (add peanut butter) @ The Slider Inn

The first thing you need to know about Slider Inn’s Buffalo Chicken Slider is that you should order it fried. They’ll serve it grilled, but that’s your loss. As is, the sandwich comes with a palm-sized chicken breast drenched in buffalo wing sauce and topped with American cheese, lettuce, tomato, and ranch.

Here’s the second thing you need to know — hidden off the menu, secret but paramount. Ask for peanut butter, and the sandwich will come with a layer of crunchy goodness spread across the bottom bun. The ranch, buffalo sauce, and peanut butter assemble in your mouth upon first bite. It’s manna on the tongue.

For all its glory, there’s no way around it, you’ll smack your way through this mess of a meal. The peanut butter serves as a medium between the milky ranch and hot and tangy buffalo sauce, softening the spice to let the flavors shine.

Chefs Speak Out

It’s not easy to eat your way through Memphis, one piece of chicken at a time, especially if you’re trying to go veg (I’m at about a week this go around). That’s why I asked some of my favorite chefs in town to serve as my chicken-chowing proxy and name the chicken dishes they go for when they get a break from the grind.

Chef Kelly English, who can do things with chicken that grant him James Beard Semifinalist awards and spots on television and in Bon Appetit, can’t say enough nice things about the magic that happens in the kitchens of Memphis visionary chef Karen Carrier. “I just had my favorite chicken dish ever at the Beauty Shop — Karen’s smoked chicken dish,” English says. He’s referring to the Hickory Grilled Chicken, which comes in a Thai green curry broth with candied garlic chips, pickled red onion, watermelon, Thai basil, mint, cilantro, and corn fritter. “It was fan-frickin’-tastic. It is my favorite chicken dish I’ve ever had at a restaurant.” He may or may not have posted on Facebook that “Karen Carrier is the coolest kid in school.”

Chef Gary Williams, of DeJaVu legendari-ness, has done his share of traveling and sharing his New Orleans recipes with A-listers, and points to several restaurants who serve up chicken goodness in Memphis, including Cozy Corner’s Cornish Hen, Uncle Lou’s honey chicken, and HM Dessert Lounge’s ability to take chicken and waffles to the nth degree. “I’m a chicken connoisseur,” he says. But there’s one spot in particular that has his heart. “There’s this little spot called Pho Binh on Madison, and they do this chicken dish that has pineapple and is a little spicy, served over rice. That is one of my favorite places. It’s a gem,” Williams says. — Lesley Young

Being Pirtle

So what’s it like being a Pirtle? It’s good, say Cordell and Tawanda Pirtle. And as they go over the past, present, and future of Pirtle’s Fried Chicken, a couple approaches and asks for a picture. As they move on, the woman exclaims in a whisper, “Oh my goodness!” “Happens all the time,” Tawanda says.

Cordell is the only child of Jack Pirtle, the founder, with his wife Orva, and the force behind Jack Pirtle’s. Cordell describes his father as an outgoing man, a doer and a creator. Jack opened his first restaurant near the Firestone plant in the 1940s and then hooked up with Colonel Harland Sanders of Kentucky Fried Chicken. Jack sold Kentucky Fried Chicken using Sanders’ special seasoning, alongside Pirtle’s burgers and hotdogs.

Cordell says the first contract with Sanders was a single page, double-spaced. Later, when KFC sought a more formalized agreement, Jack decided to move on, eventually phasing out the KFC part of the business.

“He couldn’t use the same cooking equipment because it was part of the process for KFC. He built his own cooking equipment, pressurized cookers, and then my mother had a degree from the University of Tennessee in home economics, so she and he together tried different formulas. They went through a lot of different formulas and came up with this and varied it some for the first year as they saw how it did. That started in 1964,” says Cordell.

Pirtle’s seasoning was originally mixed in a device Jack built that looked like a concrete mixer. The recipe is top secret. “That’s what Pirtle’s is known for, that taste that we have,” Tawanda says. “It’s the same seasoning that the gravy is made out of. It’s a huge deal for us. And the spices have to be mixed up for a period of time for all of them to combine correctly.”

Cordell, who started working at Pirtle’s at 13, took over the business in 1979. “It was doing well. We had six stores at the time. When I took it over, I had been a store manager for 17 years. So I had pretty much been there/done that on almost everything,” Cordell says. “When I took it over it was almost more of an organizational change.”

“Your daddy thought you were going to go broke,” Tawanda interjects.

“Precisely,” Cordell agrees, noting his father’s concern over the purchase of expensive cash registers and a centralized warehouse.

Pirtle’s didn’t go broke. There are now eight stores. They get approached a lot about franchising — about three times a week, says Tawanda.

They’ve resisted franchising, as they want to work out the best deal for them and the franchisee. While none of their kids (he’s got three, she’s got two) have shown any interest in the business, they’re hoping that one of their grandkids or great-grandchildren will sign on and take on franchising.

As for the future, they’re considering more stores. They’ve thought about opening a Jack Pirtle’s Cafe.

Cordell is 72 and retired. Sort of.

“I tell everybody they’ve got the tired part right,” he says, laughing. “But, no, as far as being totally retired, when you’re involved in a business your entire life and you’ve grown up in it and you know all the people, you really can’t just simply say, I’m done. It’s always there. It’s always on your mind.” — Susan Ellis

Hog & Hominy’s Thunderbird! 40 Twice!

Hog & Hominy is known for its great food like the Red Eye pizza. However, if you take a minute to look at the rest of their menu, it’s more than just the Red Eye pizza that stands out. In fact, my waiter for the evening, Mickey B., verified this when going over everything. “Some things have changed, other’s haven’t. For example, our pizzas are still fantastic,” he said. So I decided to go with the one I couldn’t stop staring at, the Thunderbird! 40 Twice ($16)! Turns out it was my waiter’s favorite pizza on the menu.

The Thunderbird! 40 Twice! is made up of fontina and mozzarella cheese, pepperoni and spicy honey. The two cheeses blend well together and melt in your mouth. The pepperoni is savory and well cooked. As for the pizza crust, it’s thin, crunchy and has a small coating of oil on it. Overall, the pizza is very spicy. The spicy honey kicks in immediately, but after a while the spiciness dies down, the sweetness of the honey kicks in and the pizza becomes this amazing spicy and sweet mixture. Try this pizza immediately! There wasn’t one slice left!

Hog & Hominy’s Johnny Snack

Sunday Funday Brunch has been a staple at Hog & Hominy, and they’ve added some new items to the menu in the past few months. One of the newer dishes is the Johnny Snack ($15), a smoked pork chop with a fried egg, polenta, and bloody mary sugo.

Yes, this dish is as amazing as it sounds. The pork chop is sweet, juicy, and fatty. Normally I wouldn’t eat the fatty parts of my meat, but I LOVED the fatty parts on this pork chop! It all melted in my mouth. The ends of the pork chop were charred and I was expecting to not like it. Wrong! It created a great “smoked” type of taste to the meat. The fried egg was creamy and went down smoothly. The polenta was creamy as well and cheesy. It was delicious. The bloody mary sugo tasted like a light, airy version of Tabasco sauce. It was delightful. I didn’t think everything would go together well. Wrong again!

This dish is Southern comfort at it’s finest. I’ll be back for Sunday Funday, and for the Johnny Snack!

The Best Gluten-Free Pizza in Memphis

Has there ever been a more hated foodstuff than gluten?

The proliferation of gluten-free pizza on local menus is indicative of this ill will held by celiacs and gluten-intolerants alike. Heck, some people choose to be gluten-free (GF) just because they can! This is America after all.

When it comes to deciding who has the best gluten-free pizza in town, it’s a hard thing to judge. Andria Brown, who was diagnosed with celiac disease a couple of years ago, explains, “Non-GF people just shouldn’t eat it, and GF people’s opinions vary depending on how long it’s been since they had real pizza. In general, the thinner, crispier crusts are better because they’re not trying to be soft and chewy.”

Leigh Espy, who is gluten-intolerant, agrees. “Gluten-free crust is not the same — you don’t get that lovely chewy texture, but I’ve always preferred the thin, crispy crust anyway.”

Of course, depending on how much you hate gluten (and how much it hates you), cross-contamination factors must be considered as well. Here’s an overview of your current options:

Mellow Mushroom

Annica Kreider, VP of brand development, says Mellow Mushroom began offering gluten-free crust several years ago as a result of requests from guests who were no longer able to enjoy pizza. It is celiac-safe. ”We pride ourselves on this aspect of our program. Our cooks have been trained on the importance of preventing cross-contamination,” Kreider says. The kitchen staff will wash their hands, put on fresh gloves and a fresh apron, and only use gluten-free dedicated cooking utensils and ingredients. Everything is made to order and prepared in a separate area. A screen pan is used during the baking process so the gluten-free crust never makes direct contact with the pizza stone. ”While realizing that a gluten-free crust would likely never taste the same as our signature Mellow dough, our goal was to deliver a flavor profile that was just as delicious as our regular crust for the gluten-free audience,” explains Kreider. 

It has totally different ingredients from the regular crust, which is thicker. “A combination of ancient grains really gives it a delicious and hearty flavor, and it crisps up very nicely.  We also were able to make it vegan in the reformulation,” she says.

The crust is very popular, thanks to a dedicated marketing campaign.

Rock’n Dough Pizza Co.

Amanda Denno says at Rock’n Dough they had a substantial customer demand for a gluten-free and/or low-carb option. “Some people simply preferred to eat low-carb, and other people needed to avoid gluten due to dietary sensitivities or gluten allergies,” she says.

They use a pizza crust mix from local Memphis company Nourishe and prepare it in-house. The crust mix itself is 100-percent gluten-free, however, Rock’n Dough prepares this dough mix in a kitchen where flour containing gluten is heavily used. Steps they take to minimize gluten cross-contamination include storing it separately from other ingredients in a sealed container and preparing the gluten- and grain-sensitive dough at different times than gluten-containing dough.

“We take care to minimize cross-contamination, but it is possible that small amounts of gluten do get incorporated. For this reason, we cannot guarantee the crust we serve in the restaurant is 100 percent gluten free,” Denno says. This pizza crust is therefore not suitable for people with severe gluten allergies or reactions. It is listed as “gluten- and grain-sensitive” on the menu, and they train their staff to discuss the possibility of cross-contamination with their guests so they can be fully informed. 

Denno says the crust tastes great. It contains nut, seed, and root vegetable flours and is naturally free from gluten, grains, and soy. It is also lower in carbohydrates than many other gluten-free products and is Paleo-diet friendly. “Nourishe specializes in great-tasting gluten-free products, and we specialize in great pizza — when you combine them, it is the best!” she says.

Rock’n Dough does not currently offer gluten-free on their food truck, but they do offer it for private catering events, where the menu is decided prior to the event.

Pyro’s Fire Fresh Pizza

Co-owner Chad Foreman says Pyro’s offers a gluten-free crust that many guests, both those with celiac disease and those just wanting to minimize gluten in their diets, really like.  “Our gluten-free crust is made with rice flour, and we offer to cook it in a pan for our more sensitive guests,” he says.

However, they do not offer a 100-percent gluten-free experience. “We do not recommend any of our products for individuals that are extremely sensitive. Since we make our signature thin crust in-house everyday with flour and semolina, our restaurant has gluten particles everywhere, which makes cross-contamination virtually impossible to avoid,” Foreman explains. This cross-contamination means that although their rice-based crust is gluten-free, most of the toppings and the oven they cook it in are not gluten-free.  

Guests are pleasantly surprised by how light and airy the crust is.

Russo’s New York Pizzeria

Chef Anthony Russo spent two years perfecting the recipe for his gluten-free crust. The secret is that it is bound together with honey and a Sicilian olive oil made specifically for Russo’s.

Jackson Lewis, the franchise’s PR representative, says there is a serious need for great-tasting gluten-free options, and because of this, Russo’s offers guests an entirely gluten-free menu. Additionally, the retail version of the gluten-free pizza is sold in 3,000 grocery stores across the United States.

Local franchise owner, Brett Steiner, says to prevent cross-contamination in the Germantown store, they keep the pizza crust in a separate cooler and change their gloves prior to making the order. The crust is very popular. They sell at least 50 a week.

Hog & Hominy

Hog & Hominy makes its gluten-free dough in-house. For a $3 upcharge, all pizzas on the menu can be made gluten-free. They keep the dough separate and roll it separately, but it isn’t guaranteed to be 100-percent safe for celiacs because regular flour is used throughout the kitchen.

Ciao Bella

Ciao Bella orders a gluten-free, pre-baked, 12-inch crust from a company in New Jersey called Conte’s Pasta through their specialty foods distributor. It is prepared with separate utensils, but it is prepared in the same pizza station as the rest of the pizzas and cooked and in the same pizza oven as everything else.

MPC also orders a frozen gluten-free crust. Like Ciao Bella, they use separate utensils, but it is prepared and cooked in the same station/oven as regular pies.

Chuck E. Cheese’s

Chuck E. Cheese’s has a gluten-free pizza that comes in a sealed, oven-safe bag. It isn’t opened until it gets to the table, and a one-time-use pizza cutter is provided. It’s celiac safe, but rumor has it, not very tasty!
