Beale Street Music Festival ’22 Recap: Saturday

The second day of the 2022 Beale Street Music Festival began without the logistical headaches of the first day, but under ominous clouds. Nevertheless, for as long as the weather held, the vibes were good, while the music ranged from the passable to the sublime.

This time, it was my personal logistical problems that led me to miss opener Blvck Hippie, one of Memphis’ coolest current rock acts. As Alex Greene reported in his Flyer cover story, this year featured more Memphis artists than ever before. Judging from the reactions our folks have been eliciting from the throngs gathered in the shadow of the Coliseum, increasing the locals’ main stage time is the best decision Memphis in May has made in a long time.

The weekend has been a Memphis hip-hop homecoming. Friday night’s Three 6 Mafia set was literally the boom heard round the town. Lil Wyte’s show became a bone-shaking Frayser reunion, with Al Kapone joining the show to whip the crowd into a frenzy with the weekend’s umpteenth “Whoop That Trick.”

Across the former fairgrounds, Ayron Jones’s guitar heroics made ’70s-derived hard rock feel fresh. The razor sharp band’s music is made for the wide open spaces of the outdoor music festival. When they closed with a searing cover of Jimi Hendrix’s “Voodoo Chile,” I was reminded that I heard that song at my very first Beale Street Music Festival, when headliner Stevie Ray Vaughn tore it up three months before his death in 1990.

Here’s a tip from a seasoned BSMF rat: It’s always a good idea to pop into the Blues Tent for a minute to sit down and cool off. That’s how I caught Love Light Orchestra’s John Németh blowing some harp with boogie woogie piano player Mitch Wood and his Rocket 88s.

The biggest crowd of the day so far was Project Pat — and I’m talking about the crowd on the stage, too. The Memphis rap idol brought his entire posse onstage with him, including some young dancers from LYE Academy who threatened to steal the show. “Chickenhead” and “Slob on My Knob” had the entire fairgrounds getting buck.

The festival circuit, which was bigger than ever before the pandemic, can be quite lucrative for bands who can crack into it. Grouplove, originally from Seattle, is one of the groups who optimized itself for summer fun. Singer Hannah Hooper has mastered the tricky art of communicating with a huge, easily distracted audience, with colorful wardrobe and big personality. Stone Temple Pilots new front man Jeff Gutt was another skilled practitioner of the carefully considered sweeping gesture.

After impatient chants of “We want to spoon!”, Britt Daniel’s band Spoon took the stage to give the indie rock. “Five minutes ago, we thought we weren’t going to play, because of the storm,” said Daniel. After an ominous sunset, lightning was flashing in the west.

As rain began to fall in the park, I was treated to the best performance of the weekend. With the Bo-Keys swinging like a barn door behind him, Don Bryant burned down the Blues Tent. The 80-year-old singer delivered deeply impassioned readings of songs from his decades-deep catalog. As squall lines lashed the tent and people danced in the aisles, a tourist turned to me and asked in slack-jawed amazement, “Who is this guy?”

“A genius!” I yelled.

Don was almost done with his set when the announcement came to evacuate the venue. The supercell that we had all been watching on our smartphone radar apps was dumping penny-sized hail perilously close to the park, and the powers that be finally decided to pull the plug. As we scurried for the exits, I heard a passerby say “I guess Megan didn’t want to get electrocuted.”

Figuring the show was over, I called for a ride home. But the storm passed quickly, and two hours later Megan Thee Stallion and Smashing Pumpkins finally did play to the most hardy — and presumably wettest — festivalgoers.

Hometown Heroes: Beale Street Music Fest 2022

“We’re back!” There ought to be a banner with those words draped over the Hernando DeSoto Bridge this weekend, marking the grand return of the Beale Street Music Festival. After being shuttered for the last two years, making it three years since the last edition, the perennial gathering of music lovers is roaring back to life with more momentum than ever.

The typical BSMF experience always runs the spectrum from your favorite blockbuster artist to that new unheard-of band that blows your mind. And as for the former, concert-goers need little additional information on why Megan Thee Stallion, Weezer, or Van Morrison are phenomenal. But for the typical out-of-town fan, too many artists based in Memphis fall in the latter category. Naturally, given that Memphis still rules the airwaves and charts as in days of yore, plenty of our local artists need no introduction, either. But chances are good that everyone will discover something new about the Bluff City after this weekend.

Randy Blevins, vice president of marketing and programming at the Memphis in May International Festival, thinks this makes BSMF especially valuable to the city. “People talk about going to other places and exploring to learn about new music,” he says. “Most of our ticket-holders come from over 200 miles away. They’re coming from all 50 states and five or six different countries. So most of the people there are not Memphians. There are a lot of people coming here from out of town; exposing them to these Memphis acts that Memphians know and love is part and parcel of helping promote Memphis. You might show up because you bought tickets to see Counting Crows, and out of nowhere you learn about Don Bryant. The average person may or may not know about him. That’s Memphis pumping through the blood. We’re helping to spread the word.”

Sure, we all love songs by Smashing Pumpkins or DaBaby or Sarah McLachlan. Of course the Indigo Girls and Shaggy and Lindsey Buckingham are phenomenal. Toad the Wet Sprocket, Soccer Mommy, and Robert Randolph are worth a special trip. But given that it’s such a point of pride for the festival, and in light of the fact that this year’s BSMF boasts the most local acts ever — “at least over the past two decades for sure,” Blevins says — today we celebrate the native talent that makes Memphis ground zero for so much musical innovation and style. Here, by the day of their appearance, are the hometown heroes that make this music festival a little different from most.

Three 6 Mafia
Bud Light Stage, 10:35 p.m.
No group represents the staying power of Memphis hip-hop like Three 6 Mafia, who’ve parlayed their relatively obscure, ’90s cult status into global celebrity through the staying power of their game-changing beats and attitude. Now their horror-movie soundtrack to life on the Memphis streets, which won them an Oscar, has morphed into the crunk and trap genres. See where it all began.

Bud Light Stage, 6:15 p.m.
Kapone came up alongside Three 6 Mafia back in the day, and also contributed to the award-winning Hustle & Flow soundtrack. His “Whoop That Trick” from the film lives on as an anthem for the Memphis Grizzlies. Lately, he’s become more eclectic but always grounded, telling the Memphis Flyer’s Michael Donahue: “At some point I’m still just a songwriter, a guy from the projects and the hood.”

Amy LaVere
Zyn Stage, 5:45 p.m.
This singer, songwriter, and bassist extraordinaire is such a fixture on the local scene that it’s easy to forget that she’s a Louisiana native. It was in Memphis that she really found her voice, and she even lured her husband Will Sexton here from his native Texas. We dubbed LaVere’s most recent album, 2020’s Painting Blue, “dark and beautiful.”

Kenny Brown
Coca-Cola Blues Tent, 9:05 p.m.
Hailing from North Mississippi, Michael Donahue calls Brown a “Hill Country Hero.” Given the way the blues ebbs and flows, only to be reinvented by stalwart artists like Brown, that’s not an exaggeration. He learned well from the likes of R.L. Burnside and Junior Kimbrough. No wonder his latest album, with The Black Keys and Eric Deaton, snagged a 2022 Grammy nomination.

Earl the Pearl
Coca-Cola Blues Tent, 6 p.m.
Born in 1936, Earl Banks is a living link to the blues in its rawest, earliest expression. Having first played with Joe Hill Louis, he went on to define the Memphis blues style for decades and can still be seen on Beale Street nearly every week. From Jimmy Reed to Howlin’ Wolf and B.B. King, Earl the Pearl makes every blues his own, with a guitar tone like quicksilver.

NLE Choppa
Zyn Stage, 7:30 p.m.
With “one of the greatest flows in current hip-hop,” as M.T. Richards wrote in 2020, NLE Choppa brings a unique angle to trap music. This “creature of Memphis’ strobe-lit skating rinks” honors his Jamaican heritage by “sprinkling patois in rap’s everyday vocabulary.” He’s created a unique sound and credits his hometown: “So many good artists are in Memphis,” he says.

Project Pat
Zyn Stage, 6:15 p.m.
Few artists are as close to the Three 6 Mafia orbit as Project Pat, self-described brother of Juicy J, whose biggest hits were on the Hypnotize Minds label owned by J and DJ Paul. Yet Project Pat has crafted his own identity with Dirty South classics like “Chickenhead,” “Ballers,” “Don’t Save Her,” and the ever-relevant “Ghetty Green.”

Duke Deuce
Zyn Stage, 4:50 p.m.
With his hit single “Crunk Ain’t Dead,” Duke Deuce has let it be known where he’s coming from. Son of Duke Nitty, a producer for Gangsta Blac and Nasty Nardo, the rapper’s name-checked his hometown in debut tracks, “Memphis Massacre” and “Memphis Massacre 2.” Last year, his debut album Duke Nukem debuted at No. 3 on the Billboard Heatseekers Albums chart.

Lil Wyte
Zyn Stage, 3:25 p.m.
It’s no accident that Lil Wyte is a natural ally of rapper Frayser Boy. Growing up in Frayser helped Lil Wyte transcend any racial barriers, as he proved himself in the world of Three 6 Mafia enough to release his debut on the Hypnotize Minds label, with hits like “Oxy Cotton” and “My Smokin’ Song.”

White $osa
Zyn Stage, 3:25 p.m.
Kicking off the Zyn Stage string of Memphis rappers, White $osa is unique in that his name inspired his rapping, rather than vice versa. Originally gaining fame through an Instagram account that’s now up to 129,000 followers, it turned out he had a flair for flowing rhymes as well. Since turning to music, his collaboration with NLE Choppa has garnered 21 million streams on Spotify.

Blvck Hippie
Bud Light Stage, 2 p.m.
As Jesse Davis wrote in the Memphis Flyer, this group’s 2019 track “Hotel Lobby” is “one of the catchiest Memphis-made songs in recent memory.” With indie-pop songs marked by “excellent arrangements” and group founder Josh Shaw’s “open and honest lyrics,” and fresh off a series of concerts at South by Southwest, Treefort Music Fest, and Audiotree promoting their new LP, If You Feel Alone at Parties, Blvck Hippie is one gem to keep an eye on at this year’s festival.

Tora Tora
Terminix Stage, 2:15 p.m.
If you thought that Memphis was all about blues, soul, and hip-hop, think again. These metal masters have been honing a distinctly Mid-South variant of their chosen genre since the ’80s, when a trio of hits like “Walkin’ Shoes,” “Guilty,” and “Dancing with a Gypsy” (the latter featured in the film Bill & Ted’s Excellent Adventure) powered a career that includes 2019’s Bastards of Beale.

Don Bryant & the Bo-Keys
Coca-Cola Blues Tent, 9:25 p.m.
Don Bryant has lost none of the power of his voice since he began performing over half a century ago. Indeed, his delivery has matured as if aged in an oak barrel, and now that he has ace neo-soul group the Bo-Keys backing him up, we dubbed his latest LP, You Make Me Feel, an “instant classic” of pure, down-home soul.

Ghost Town Blues Band
Coca-Cola Blues Tent, 7:55 p.m.
This group is proof positive that the blues still offers plenty of room for innovation. Not your typical bar combo, Ghost Town Blues Band blends traditional blues with Stax-era soul and even includes novel instruments like cigar box guitars and electric push brooms in their arrangements. Expect the unexpected.

Barbara Blue
Coca-Cola Blues Tent, 2:10 p.m.
Blue is a queen of Beale Street, a regular performer at Silky O’Sullivan’s who has worked with some serious contenders in the past (including three albums with Taj Mahal’s Phantom Blues Band in the 1990s). Her latest album even features the legendary Bernard “Pretty” Purdie on drums. World-class blues, soul, and jazz live on with Barbara Blue.

Moneybagg Yo

SUNDAY

Moneybagg Yo
Bud Light Stage, 7:40 p.m.
It was only five years ago that Zandria Robinson reported on Moneybagg Yo’s album release party for his debut, Federal 3X, and now he’s a leading star in the trap music universe. His 2020 album, A Gangsta’s Pain, debuted at No. 1 on the charts. Yet he continues to appreciate his hometown, gifting Covid-related supplies to local schools after that album conquered the charts.

Jucee Froot
Bud Light Stage, 2:10 p.m.
If Memphis hip-hop is dominated by male stars, Jucee Froot is bucking that trend with her meteoric climb to fame. Since 2020, when she released her debut Black Sheep on Atlantic, she’s had tracks featured in soundtracks for the film Birds of Prey and the series P-Valley and Insecure.

Cory Branan

Cory Branan
Zyn Stage, 2 p.m.
Rolling Stone got it right when they dubbed this consummate singer/songwriter “a country boy with a punk-rock heart.” Since the late ’90s, when he found his voice in the Memphis indie scene, he’s been perfecting the combination of those elements in his music and lyrics. He’s also a phenomenal guitarist. Watch for a new album later this year.

Blind Mississippi Morris
Coca-Cola Blues Tent, 3:25 p.m.
Blind Mississippi Morris is Beale Street royalty, and no festival named for the famed blues district would be complete without his uniquely powerful harmonica playing and singing. The recipient of the Mississippi Music Foundation’s Lifetime Achievement Award and a two-time winner of the Premier Player Grammy Award for Harmonica Player of the Year, Morris combines the grit and grind of the blues like no other.

Melvia “Chick” Rodgers
Coca-Cola Blues Tent, 3:25 p.m.
A vocal powerhouse, Melvia “Chick” Rodgers-Williams grew up in the historic Black neighborhood of Orange Mound, singing in her father’s church. Being steeped in the passions of gospel music stuck with her, as she followed her musical star on USO tours and a successful career in Chicago. With BSMF, she’s bringing it all back home.

BSMF 2022: Liberty Park Logistics

The Beale Street Music Festival is such an institution in Memphis, and so closely associated with Tom Lee Park, that any change to the winning formula is hard to fathom. Yet fathom it we must, as the BSMF situates itself on new grounds this year so that work may continue apace on the riverfront space where it typically lives. And if Tom Lee Park, once given its remake, promises to be better than ever, the 2022 iteration of the festival will have a glory all its own, nestled in the shadow of the Liberty Bowl Memorial Stadium. To get a sense of what has changed and what has remained, Memphis Flyer asked BSMF’s Randy Blevins to give us the lay of the land.

Memphis Flyer: It must have caused quite a shake-up to relocate away from your usual home. How will the experience be different for festival-goers?
Randy Blevins: We’re going to be at the fairgrounds at Liberty Park just for this year while Tom Lee Park is under construction. As far as the festival is concerned, the layout is a different shape. Where everything at Tom Lee Park is kind of lined up north to south, the fairgrounds at Liberty Park are in a big rectangle. It’s still a big site. Two of the main stages will have the Liberty Bowl in the background, and the other main stage will have East Parkway in the background. There’ll be two main entrances on the north and on the south. And in the middle is Tiger Lane.

It actually surprises people who may have only driven on Tiger Lane or to the Coliseum. Once you’re there, you realize that’s a really big space. The fairgrounds had the Mid-South Fair for such a long time, and there’s plenty of room for the experience. So it’ll include all the things you’re used to seeing, just placed a little differently. All three stages will be triangulated with plenty of space between them. From the fountain at Tiger Lane, you’ll be able to see one stage to the south and another to the north. So it’ll create a really electric atmosphere.

How will parking be handled this year?
We’re trying the best we can to make things easy and nice for everybody. There is on-site parking, and that area is accustomed to holding big events. And there are all these other locations, like CBU and other places that turn their surface lots into parking. We’ve also arranged with MATA to have a free rapid shuttle coming from Downtown. Most of our fans are coming from 100, 200 miles away, spending on average two to three nights at a hotel in Memphis. And most of our hotels are Downtown. That’s why Tom Lee Park works so well. So this year we’ll have a rapid shuttle, which will pick up at two locations: B.B. King and Union, and on Second Street by the [Renasant] Convention Center. Ticket-holders will be able to hop on the rapid shuttle and get dropped off at two locations, then take the shuttle back Downtown to continue to hang out on Beale Street and enjoy all the nightlife down there. If you’ve ever been Downtown after the festival, it’s packed. So we want that to continue. And if people want to use that, it’s free, but they have to register online first. They just show their ticket and they can hop the shuttle and ride about every 10 minutes or so, depending on traffic.

We’re also coordinating to set up a couple hundred spaces at the University of Memphis, and you’ll be able to buy access to a parking spot next to the Holiday Inn there, and then ride a shuttle from the U of M to the site and back. That’s just for Memphians who might not want to go Downtown and don’t want to deal with congestion around Liberty Park. It might be a nice option if you’re coming in from Cordova or Germantown.

The festival’s been delayed for years because of the pandemic. What procedures are in place to address Covid?
We have a disclaimer on everything and we have a plan ready to go if anything happens, as we did last year when we had a half festival with the barbecue cooking contest at limited capacity. Whatever comes down from the Shelby County Health Department, we’ll comply and do what needs to be done. The world’s used to this now.

Have artists made different requests as far as vaccinations and the like?
There have been different requirements from artists, but that’s become less and less part of the conversation as the months and weeks have come along. Currently we’re not asking for proof of vaccination from the public. But currently, anything is possible. Some of the artists have different requirements for ground transportation that’s picking them up or in the backstage areas. They might request masks. The vendors and backstage crews will meet each specific artist’s requirements.

After the 2020 festival was canceled, did many ticket holders opt to just redeem their tickets when the festival resumed?
We have a decent number of deferrals. We did not get a lot of refund requests. Many folks just decided, “Whenever you come back, we’re in.” It shows the staying power of the story. It’s a great deal of trust, if you’ve paid hundreds of dollars for tickets, in some cases, and you’re flying blind because you don’t know who we’re going to book. So we felt pretty good that 90 percent of the people weren’t just saying, “Give me my money back.” It could have happened. We were prepared for whatever.

Has it been difficult to gear up for this after such a long hiatus?
Just a short time ago, we were at a skeleton staff of only five people and the future of everything was a giant question mark. A festival depends on bringing people together in big groups. We don’t receive money from the city or the state or anything to cover overhead. And we had a reserve saved up for a rainy day, but a rainy day is a bad year, not a year with literally nothing. Who would have ever predicted that, right? So it was really tough. To be in the situation we’re in now, back to doing a big, full-on festival, is really good. There were no guarantees just a short time ago, when everything was shut down and there were just five of us, basically, living month to month. We just started hiring people and getting back up to full staff this fall. And we’re glad to be back, and glad that we’re getting such a good reception to this.

Music Video Week: Duke Deuce ft. Lil Jon, Juicy J, and Project Pat

It’s a Music Video Week double shot with Duke Deuce and crew. Back in the Before Time of November, 2019, the Memphis rapper scored a major hit by answering the musical question, “Is crunk dead?” The studio video, shot by Wikid Films, racked up more than 17 million views on YouTube.

Unapologetic Releases New Comedy Chat Show “What You Doin, Nothin?”

The ever-restless minds of the Unapologetic Records crew recently had a big show at Crosstown Theater canceled because of COVID-19 pandemic. (You can see some video of their epic Indie Memphis 2019 performance here. I was there, and it was even more spectacular IRL.) Now, to fight those lockdown blues, they’re releasing a long-gestating project.

“What You Doin, Nothin?” is a combination of interviews and surreal comedy skits featuring Unapologetic’s Cameron Bethany and A Weirdo From Memphis. “We shot this series in 2017, and, for a handful of reasons, never released it,” says producer and Unapologetic mastermind IMAKEMADBEATS. “I think there couldn’t have been a better time than now.”

The first episode, “Shaved”, which features Memphis hip hop legend Project Pat, drops today (Monday, April 20th) on the Unapologetic YouTube channel. The second episode “Memphis Drill Sargent” will feature a guest appearance by Bluff City funnyman Tutweezy. After the first two episodes are released on YouTube, the remaining episodes will stream on the Unapologetic World app, which is available for both Android and iOS devices. Here’s a little taste of of the weirdness to come:

The Bird’s the Word

Over the weekend, a man was arrested for stabbing a gas station worker over “bad chicken.” Now we’re not ones to condone violence —no stabbing! — but people around these parts have certain expectations that their chicken is going to be good.

This issue is all about good chicken. Plenty of words have been written about Gus’s and Uncle Lou’s, so we decided to explore Memphis’ other chicken avenues. We guarantee that you’ll be hungry after reading this.

If heaven ain’t a lot like The Dirty Crow Inn, I don’t want to go. (I checked, and it’s fine to rip off Bocephus when you’re talking chicken. “He wouldn’t mind,” is what the rule book says.)

I’d heard tell of a chicken Philly sandwich at the Inn. It’s a special sometimes, the bar man told me, but not part of the regular menu. At that low moment, a ray of hope cut those rainy clouds — the word “debris.”

The Inn keepers have called it the “Chicken Debris PoBoy” online, but the Dirty Crow menu said, “smoked chicken debris” sandwich. To me, debris is debris any way you cut it (or don’t, I guess). And I’ve seen it swimming in the serving pan at Mother’s, the famed New Orleans restaurant that invented debris (the term anyway).

My sandwich at the Dirty Crow was every bit a po’boy, beautifully smoked chicken bathed in an earthy brown gravy riding two light (and lightly toasted) pieces of French bread from Gambino’s, that fine and famed New Orleans bakery.

Sometimes “smoked” menu items, even in Memphis, don’t taste that way. The Crow’s chicken debris sandwich does not leave you guessing. Its smoke flavor is present but delicate, the way it ought to be. It blends seamlessly with that gravy and a nice dose of melted cheese that pulls away in a pizza-commercial string as you pull the sandwich from your mouth.

The place is heaven for dive-bar aficionados (like me). The food makes it a before-you-die destination for all Memphians. — Toby Sells

Fried Chicken @ Cash Saver

Sometimes, you just gotta have fried chicken. Last week, I was so desperate I went to the KFC drive-thru and ordered a box. “Thlbetwtyminawtfcxx” came back over the microphone.

“What?”

“What?”

After several attempts, the fellow managed to get the message to me: “There will be a 20-minute wait for chicken.” Right. At a chicken restaurant. So …

I’ve been hearing about Cash Saver’s fried chicken for more than a year now. Midtowners who I know and trust have said to me, “That fried chicken is the real deal. And cheap!” Some said it was the best in town. I don’t know about that, but I’m here to tell you, they were right about it being very good. And very cheap.

I ordered two breasts and two thighs. Total cost? $5.19.

Romaine Salad with Chicken Skins @ Hog & Hominy

Anytime I see someone slip off and discard the skin from an otherwise perfect piece of fried or baked chicken (but especially fried), I inwardly pray for their poor soul and wonder who it was that set you down a path of self-deprivation.

It’s not only that they are missing out on some heart-healthy unsaturated fats, it’s that they might still fall victim to this woefully false myth that this is something you have to do to make your chicken healthy enough to consume (spoiler, it’s not).

Well, someone at Hog & Hominy decided, “Screw that, we’re devoting a dish solely to chicken skins.” And just to round it out, lest the consumer grew up under the anti-skin mythology, that someone decided to build their chicken dermis homage on a bed of Romaine lettuce.

The result is an unexpectedly cohesive salad, misleadingly and simply titled, “Romaine.” The chicken skins used are more akin to a pork rind rather than the double-breaded crunchiness of most fried chicken pieces. These puffy morsels are strewn atop a decent portion of lettuce, which is in turn covered in snowy Parmesan and drizzled with pecorino vinaigrette.

The skins are lightly seasoned so the vinaigrette can come in and work its magic by introducing a low level of spice and tang, two flavors that pair surprisingly well with the fried fat essence of the skins. The Romaine lettuce does what Romaine was put on this earth to do, namely, trick us into thinking we’re consuming something mega-healthy when we are not. And, of course, it’s the perfect semi-crunchy vehicle that supports the crispiness of the skins.

Be warned, though, this is not the type of salad loaded down with auxiliary vegetables and croutons. It’s not going to fill you up. But it will deliver piquancy worthy of what I have determined to be the greatest part of the chicken.

Chicken Tamales from Tacqueria La Guadalupana food truck

Tamales were among the earliest food imports from south of the border to make it onto Norde Americano menus, and they remain a staple, whether in supermarket cans or on restaurant tables. Something of a debate rages as to whether the meat base in those wraparound masa cylinders should be beef or pork, but there is a third possibility — chicken — and a good place to sample it is from the Tacqueria La Guadalupana food truck that sets up daily on the north side of the shopping-center lot where Cordova Road intersects with Germantown Parkway — in an area that is more multi-ethnic than you might imagine. (The internationally focused Cordova Farmers Market is the big-box anchor on the lot.)

The La Guadalupana truck offers numerous cooked-while-you-wait specialties, several involving chicken. Order tamales, and what you get, for a mere $7.99, is three YUGE tamales, each with a generous and succulently breaded tortilla coating, within which is packed none of that minced mystery-meat filling you get at so many places, but steamed and tender morsels of freshly carved, fresh-off-the-bone-looking chicken meat. Two sauces are available as condiments, the green one appears to mix guacamole with chili; the red one (maybe laced with habanero) is scalding hot.

Served in a round ceramic casserole the color of red clay, the Kitchen’s wood-roasted chicken earns it $29 price tag with looks, smarts, and personality. First, cornbread panzanella sets the dish with a seasonal cacophony of tomatoes, onions, and olives. Next comes the chicken, brined, flattened, and wood-roasted to a deep and rustic char. And what swirls on top with magical brushstrokes of taste and color? The dressing, a pesto of sorts made with garlic, olive oil, lemon, and anchovies. “You don’t want to eat the chicken and think the chicken tastes like fish,” explains head Chef Dennis Phelps. “You want to eat the chicken and think the chicken tastes delicious.” — Pamela Denney

General Tso’s Chicken @ Mulan

It’s a conundrum every office has had to face as they order takeout lunch: What’s the deal with General Tso’s Chicken? Who was the eponymous military man? What’s his connection with poultry? How do you even pronounce it?

If these questions have ever prompted debate at your workplace, take heart. The answers are out there, in the form of Ian Cheney and Jennifer Lee’s 2014 documentary The Search for General Tso. It’s a fascinating look into the ways immigrant communities adapt to American life that also tells you everything you need to know about the sweet and spicy Hunan-style dish which, it turns out, is virtually unknown in China.

The first two things I noticed about the General Tso’s Chicken at Mulan is that the garnish contained a glowing LED and a dearth of broccoli on the plate. Many Chinese restaurants include plentiful broccoli with the stir-fried dark meat, and the florets come in handy for sopping up the sauce that gives the dish its deep red color. But once I bit into the succulent chunks of chicken, I realized the vegetable would have been a distraction from the main show. Each morsel was just a little crispy on the outside, tender on the inside. It was outstanding. I got the standard spice level for scientific purposes, so the sweetness and heat were finely balanced. But if you like it spicy, they’ll be more than happy to oblige.

I’m aware of no other restaurant in Memphis where one can dine surrounded by paintings of the late, great Prince hung on purple walls. I discovered the promised land, and it’s named HM Dessert Lounge. The restaurant’s focus is in its name, with one exception: chicken and waffles.

The chicken is dipped in double honey hot sauce, Jamaican jerk sauce, or spicy peach glaze. It’s then paired with a regular, cornbread, honey butter biscuit, blueberry, sweet potato, or a maple bacon waffle. Options, indeed.

I settled on four chicken breasts bathed in double hot honey sauce and coupled with a maple bacon encrusted waffle — $12 well spent. Sticky as it is, the hot honey sauce slides from the chicken and blends with the maple syrup, creating a sweet and spicy combination that brings magic to a dish which otherwise would have been too obvious. The chicken isn’t flaky but smooth, and each piece shines beneath the sauce. Slice the waffle, cut the chicken, and fork ’em together. Sauce and syrup united, the waffle coats the chicken, and bacon bits provide a necessary crunch.— Joshua Cannon

Smoke Chicken @ Picosos

There are fewer words in the English language sadder than, “Sorry, not today.” Especially if those words are spoken with genuine disappointment in a Mexican accent at Picosos, a terrific little south-of-the-border diner on Summer Avenue. The restaurant’s “Smoke Chicken” is an old-Memphis-meets-old-Mexico delicacy that sells fast, is only available on the weekends, and so succulent and good it’s worth heading out early to get your order in before the Saturday lunch crowd arrives. Served with rice and refried beans and topped with a handful of french fries, the meal is exactly what it sounds like — a quarter, half, or whole chicken covered with a heady-not-hot spice rub that’s a little on the salty side and slow-smoked to barbecue-lover’s perfection. It’s tempting to just wolf the whole thing down, but advisable to savor every spicy, smoky, chickeny bite. — Chris Davis

The Family Chicken Dinner @ SuperLo

It was a snobby Midtowner’s dilemma.

Our Target basket was full. The kids were getting pissy. We were all hungry, but the grown-ups didn’t want to make lunch.

“But there’s nothing to eat in East Memphis,” we whined without saying a word.

Wheeling through the parking lot, my wife caught a scent on the wind. “Oh my god, somebody’s fried chicken smells GOOD!” she said. We both whirled, like castaways searching the skies for a rescue plane.

The only thing that made sense was the deli counter of the Target-adjacent SuperLo. We’d been there infrequently, but I thought I remembered a big deli case. I remembered correctly.

The star of the SuperLo show was a fried chicken dinner, perfect for a Sunday lunch. Plenty of dark-brown-fried breasts and thighs lined a warming tray. But we wanted the eight-piece meal and the case offerings would not do for our wonderful deli helper.

“Nuh-uh. Give me two minutes, baby,” the woman said to my wife. “I’m going to make you up some fresh.”

Two minutes later, she filled a white, cardboard service box with two breasts, two thighs, two drummies, and two wings, like a Memphis-style Noah’s Ark. That Ark came with big-ole sides of green beans, mashed potatoes, and four King’s Hawaiian rolls. (They even added two cookies for my son. No charge.)

The chicken was crunchy-crispy on the outside, fork-tender and moist on the inside, warmly spiced, but not too spicy. It was that eye-rolling, soul-feeding, conversation-stopping, back-home-style kind of good. And all of it for about $14.

Fried Buffalo Chicken Slider (add peanut butter) @ The Slider Inn

The first thing you need to know about Slider Inn’s Buffalo Chicken Slider is that you should order it fried. They’ll serve it grilled, but that’s your loss. As is, the sandwich comes with a palm-sized chicken breast drenched in buffalo wing sauce and topped with American cheese, lettuce, tomato, and ranch.

Here’s the second thing you need to know — hidden off the menu, secret but paramount. Ask for peanut butter, and the sandwich will come with a layer of crunchy goodness spread across the bottom bun. The ranch, buffalo sauce, and peanut butter assemble in your mouth upon first bite. It’s manna on the tongue.

For all its glory, there’s no way around it, you’ll smack your way through this mess of a meal. The peanut butter serves as a medium between the milky ranch and hot and tangy buffalo sauce, softening the spice to let the flavors shine.

Chefs Speak Out

It’s not easy to eat your way through Memphis, one piece of chicken at a time, especially if you’re trying to go veg (I’m at about a week this go around). That’s why I asked some of my favorite chefs in town to serve as my chicken-chowing proxy and name the chicken dishes they go for when they get a break from the grind.

Chef Kelly English, who can do things with chicken that grant him James Beard Semifinalist awards and spots on television and in Bon Appetit, can’t say enough nice things about the magic that happens in the kitchens of Memphis visionary chef Karen Carrier. “I just had my favorite chicken dish ever at the Beauty Shop — Karen’s smoked chicken dish,” English says. He’s referring to the Hickory Grilled Chicken, which comes in a Thai green curry broth with candied garlic chips, pickled red onion, watermelon, Thai basil, mint, cilantro, and corn fritter. “It was fan-frickin’-tastic. It is my favorite chicken dish I’ve ever had at a restaurant.” He may or may not have posted on Facebook that “Karen Carrier is the coolest kid in school.”

Chef Gary Williams, of DeJaVu legendari-ness, has done his share of traveling and sharing his New Orleans recipes with A-listers, and points to several restaurants who serve up chicken goodness in Memphis, including Cozy Corner’s Cornish Hen, Uncle Lou’s honey chicken, and HM Dessert Lounge’s ability to take chicken and waffles to the nth degree. “I’m a chicken connoisseur,” he says. But there’s one spot in particular that has his heart. “There’s this little spot called Pho Binh on Madison, and they do this chicken dish that has pineapple and is a little spicy, served over rice. That is one of my favorite places. It’s a gem,” Williams says. — Lesley Young

Being Pirtle

So what’s it like being a Pirtle? It’s good, say Cordell and Tawanda Pirtle. And as they go over the past, present, and future of Pirtle’s Fried Chicken, a couple approaches and asks for a picture. As they move on, the woman exclaims in a whisper, “Oh my goodness!” “Happens all the time,” Tawanda says.

Cordell is the only child of Jack Pirtle, the founder, with his wife Orva, and the force behind Jack Pirtle’s. Cordell describes his father as an outgoing man, a doer and a creator. Jack opened his first restaurant near the Firestone plant in the 1940s and then hooked up with Colonel Harland Sanders of Kentucky Fried Chicken. Jack sold Kentucky Fried Chicken using Sanders’ special seasoning, alongside Pirtle’s burgers and hotdogs.

Cordell says the first contract with Sanders was a single page, double-spaced. Later, when KFC sought a more formalized agreement, Jack decided to move on, eventually phasing out the KFC part of the business.

“He couldn’t use the same cooking equipment because it was part of the process for KFC. He built his own cooking equipment, pressurized cookers, and then my mother had a degree from the University of Tennessee in home economics, so she and he together tried different formulas. They went through a lot of different formulas and came up with this and varied it some for the first year as they saw how it did. That started in 1964,” says Cordell.

Pirtle’s seasoning was originally mixed in a device Jack built that looked like a concrete mixer. The recipe is top secret. “That’s what Pirtle’s is known for, that taste that we have,” Tawanda says. “It’s the same seasoning that the gravy is made out of. It’s a huge deal for us. And the spices have to be mixed up for a period of time for all of them to combine correctly.”

Cordell, who started working at Pirtle’s at 13, took over the business in 1979. “It was doing well. We had six stores at the time. When I took it over, I had been a store manager for 17 years. So I had pretty much been there/done that on almost everything,” Cordell says. “When I took it over it was almost more of an organizational change.”

“Your daddy thought you were going to go broke,” Tawanda interjects.

“Precisely,” Cordell agrees, noting his father’s concern over the purchase of expensive cash registers and a centralized warehouse.

Pirtle’s didn’t go broke. There are now eight stores. They get approached a lot about franchising — about three times a week, says Tawanda.

They’ve resisted franchising, as they want to work out the best deal for them and the franchisee. While none of their kids (he’s got three, she’s got two) have shown any interest in the business, they’re hoping that one of their grandkids or great-grandchildren will sign on and take on franchising.

As for the future, they’re considering more stores. They’ve thought about opening a Jack Pirtle’s Cafe.

Cordell is 72 and retired. Sort of.

“I tell everybody they’ve got the tired part right,” he says, laughing. “But, no, as far as being totally retired, when you’re involved in a business your entire life and you’ve grown up in it and you know all the people, you really can’t just simply say, I’m done. It’s always there. It’s always on your mind.” — Susan Ellis

When I reach David Parks, cofounder of Lyfe Is Dope, he’s just finished a sound check at the Hard Rock Cafe in Miami, a venue he’ll perform at later that night with platinum-selling artist Jason Derulo.

“I’m in Los Angeles about six months out of the year, on tour for about three months, and then back in Memphis for about three months,” Parks explains, while he tries to find a quiet place in the club to talk.

When he’s in Memphis, Parks and longtime friend Damien Woods curate Lyfe Is Dope, a production/clothing company that’s grown from a small block party-type event to an anticipated annual gathering, hosting artists and socialites like Drumma Boy, Bruno Mars member Kameron Whalum, Shanell, and K97’s Devin Steel. Parks and Woods first met while working at Club 152 on Beale, and quickly decided to join forces.

“We had started putting our ideas together, and around that time I was doing a lot of touring and going to a lot of live events, so I just started taking notes,” Parks says.

“I would go to happening shows in L.A. and New York, and I noticed that there was just a huge void in the Memphis hip-hop community. At the time, most of the hip-hop shows in Memphis weren’t well planned out, and the sound was almost always bad.”

After settling on the name —Woods had a production company named “Nice Life,” and Parks had a company called “Rated D for Dope”— Lyfe Is Dope was born. With the notion that this wasn’t going to be just another hip-hop show, Parks and Woods started to come up with the ideas that are now staples at every Lyfe Is Dope event: a live band backing a rapper or artist who normally wouldn’t perform with one, visual artists, projection screens throughout the venue, merch stations, body paint booths, and even a live chef.

The first Lyfe Is Dope events were held at 409 S. Main, but the packed shows quickly outgrew that space, leaving Parks wondering what the budding production company’s next move would be.

“It grew beyond South Main, and I started thinking about trying to move the event to Midtown to bring in as many people as possible. If you’re going to go to a big show, you’re going to go to Minglewood Hall, and so that was just the obvious choice.”

On Wednesday, November 25th, at Lyfe Is Dope Volume 6, Memphis legend Project Pat will perform with backing band Trump Tight for the first time, along with Lord T & Eloise and DJ Dnyce. Parks says that there will also be a jookin’ contest, in addition to shoe painting stations where attendees can customize whatever kicks they bring to the show. If you were holding out to find out who the live chef is going to be, you’ll be happy to know Chef Kenna — an upcoming contestant on the television show Hell’s Kitchen — will be in the house.

“You won’t see Project Pat with a live band anywhere else,” Parks says.

“It’s very important to include the live band aspect, because that is what Memphis is known for. We don’t want it to be an average show; it has to be a next-level experience every time. My band will be behind Project Pat, and I’ll be serving as the music director, taking all the skills and knowledge I’ve gained over the past five years playing with some of the biggest artists in the world.”

Still, the idea of Project Pat performing songs with a full band off his club-ready albums Ghetty Green or Mista Don’t Play seems a little bit weird, but Parks insists the crowd will like what they hear.

“The misconception is that rap music would be easy to play, but you have to lock in to all those grooves and hooks to make it feel right. There’s a lot more going on than what people think,” Parks says.

“We approach the artist ahead of time and make sure it works for both parties, but I think Project Pat already knew about Lyfe Is Dope because of his relationship to Damien. The band [Trump Tight] will normally spend about a week practicing the set, and then the artist will normally come in and do a couple of days of practice before the show. I’ve noticed that when you get to a certain level of musicianship, it’s not that hard to pull off. Everyone involved just has to do their homework.”

As for Park’s intense touring schedule, he sees the experience as a way to make Lyfe Is Dope one of the best hip-hop events in the country.

“I had to turn down an Australia run to do this show,” Parks says.

“But this is my dream. This is something I believe in. This goes further than me just being a side man for someone else. You’ve gotta sacrifice, and the band isn’t gonna miss me for too long. Right after Lyfe Is Dope, I go to Angola, then I come back to L.A., and then I go to the U.K. in December.”
